I’ll be making my first black cake this year. The first time I had it was at a wedding in Trinidad 2005 and I fell in love, (with the cake that is). The top and sides were perfectly and evenly coated with that smooth and delicious icing as if it were poured on to it. Ahh to reminisce!!

Great video but i got a question. Im gonna make a black cake for my moms bday but i wanted to decorate with royal icing. If i cover the entire cake in marzipan , do i need to let the marzipan dry before i icing it with royal icing ? Or could i icing it right after ?
Jehan, does the icing ever firm up? Or does it stay soft? How does the meringue affect the texture? I’ve never used meringue powder for royal icing, but I’m tired of pasteurizing egg whites and I don’t want to use boxed egg whites. Thanks!

If’s traditional for special occasion cakes and wedding cakes in Guyana which came from the British colonialism. The cakes were covered entirely except the bottom.
I’ve had this wedding cake in Grenada. Amazing cake with almond paste & icing!!! I have never forgotten it 😊

I've never made it that way but you can frost the entire cake with it. But it would have to be poured.

Oh yes I forgot, do you need to moisten the cake before you spread the Royal Icing on the cake?
Yes you can add this on top of a carrot cake. Royal icing hardens so yes it will be hard and no you don't need to add anything.

What if you don't eat nuts, can you use something other than almond paste?
You can just omit the almond paste and use just the icing.

Almond paste or marzipan prevents the juice and colour from the cake from discoloring the white icing ....
Also alcohol and royal icing don't work. Bcus the alcohol breaks down the royal icing and it melts and fall away and ur cake wud be a mess
