This single video taught me so much about elevating bland dishes to fabulous. My husband went to the Asian market reluctantly for the black vinegar (which I adore!) And now he's clearing whole aisles in his quest for more goodies. So thank you! I love hot oil too!
I just made it with spaghetti. Best tasting thing I have made so far in my cooking career (let's just say there are more ways for me to mess dish up then there are ways to make it awesome). But this Noodle Soup is now my favorite thing to make!
Hi Mike i just found your channel.... i have to admit i like some of the sweet dishs you had mentioned in your video foods most chinese will not eat. the videos are great thanks and keep making them.
Made this dish to the letter minus the hot sauce and black vinegar & let me tell you this it came out great! Thanks for the great tips on how to make this dish. Keep up the good work
Your videos really make me think of my childhood. I miss this dish so much as my grandma used to make it all the time, but without the black vinegar. My family was from Wuhan and I guess that's not northern enought? Lol Now I think of it, I want to make stir fried potato strips. Lol love your videos!!!
I’ve learnt of your channel through simon and martina and started to binge watch your videos.....didn’t realise you did recipes too. Loving everything I watch 👍🏾
Showed this to my wife and she remembered her Mom used to make it when she was a kid. I decided to make it for her tonight and she loved it. Did not use the black vinegar since we did not have time to hit the Asian market. This is a keeper for us. Please keep the recipes coming. Thanks!
How have I never had this growing up? Do people from Hong Kong not eat this? This is probably the most perfect off season meal for me too. Thanks for the recipe and amazing videos; they all hit home as I also grew up in NYC to immigrant asian parents haha.
because I'm lazy I did it this way and it worked out pretty well: browned the minced meat (giving it a nice taste) in the pan -> added the tomatoes after the meat browned -> adding chicken stock after the tomatoes are mushy and bring it to a boil -> added the pasta to cook in the delicious chicken stock with all the flavours of the browned minced meat and the tomatoes -> when pasta is nearly done I added the eggs and kept stiring until the eggs are done (this way the eggs stick to the noodles (yummi) and still get all the good flavours -> season to liking and done :D please let me know what you think of it :)
@An Nguyen no they don't need to be cooked - but I put in the eggs when the noodles are nearly cooked (I like my noodles al dente) so I put in the eggs short before the noodles are al dente and stir the soup while putting in the eggs so the eggs give my noodles a big hug ;)
This is exactly what I was thinking. One pan and the eggs are more incorporated in the soup itself. And I definitely like my noodles mre al dente too. I was panicking with how long he left them in the pot!
I made this tonight for dinner and I used Just egg for the eggs. The vegan egg substitute and my whole Omni family loved it. This was soooooo good. Thank you Mikey Chen for the recipe. Yummy
I cook this noodle almost same as how you did, except that I will boil the noodle with tomatoes and eggs instead of boiling them separately, so tomato juice will get into the noodles. I will also add some pepper oil. Love this dish so much, and it's easy and quick.
In my family we always make tomato and egg soup (extra eggs!) but we never usually put noodles with it. Just pour it over some rice. And when we cook the eggs my mother just pours it inside the tomato and vinegar when its boiling so its super cool seeing how you make it!
Just made this! Added a tiny bit of dark soy sauce and Worcestershire sauce as my tomatoes weren't very juicy, and my mum's chilli oil, super delish!! Thanks for the vid!!
Mike, dude, thank you for this recipe. I made it today and it was by far the tastiest noodle recipe I've done. It almost brought me to tears. And it wasn't even in it's final form! :D I mean I didn't have black vinegar, so I improvised a bit, I did put scallions with the tomatoes, instead of hot oil or hot sauce i had to settle for some chilli sauce, and I was all out of seaweed. And I made mine without meat, just because. I had some already cooked meat that would fit in but I decided 'Nah'. But for next time I'm definately gonna get some black vinegar and/or sesame oil, seaweed, and I'm gonna make some hot oil! :3
hey mike, loving ur cooking videos! my grandma used to make me egg and tomato noodles in xi'an all the time! when I was younger I remember she also made me tofu skin salad (豆腐皮) heaps and it was SO GOOD.
I didn't have fresh tomatoes, so I added ketchup, 1tsp spicy red pepper flakes, 2-3 T of hot oil, to my packaged ramen noodles & it's enclosed spiced packet. While it was boiling, I added 2 whole eggs. Made 2 bowls, 1 whole soft boiled egg per bowl. Splitting that yolk open in the soup! YUM!
Omg Looks so Delicious. I made Chinese eggs and tomato’s last night and little did I know I could have made it into a soup but I’m definitely making this tonight for Dinner. Thank for all Your Amazing Videos Mickey 👍🏽🙏🏽
My Chinese flatmate made this for me at university and it was the best. She assured me it was veggie, but I saw the chicken on the bouillon packet afterwards... haha. She didn't know the ins and outs of vegetarianism as she had just moved to England, so she didn't even think of that. Oh well, it was soo good and now I can try and make a veggie version with this recipe!
Because vegetarians are weird. They wanna go vegan, but they can't bring themselves to give up milk, butter, cheese, eggs, yogurt, etc. And some even go that extra step and don't cut out fish or poultry from their diet either. Basically, they wanna be able to pretend they are better than everyone else like the vegans do, but not actually give up the good foods they aren't supposed to have.
omg mouthwatering! this totally will be my lunch this weekend :3 could you give me some details about which noodles to choose? living in Poland I might find it difficult to find the right kind
I found myself starting to feel a phantom heartburn just looking at you add all that hot oil into the soup! But seriously, this looks really good and easy to make. Thanks for the recipe!
Thanks Mikey! I make tomatoes and egg to go with rice. I never thought about having it with noodles before. That's a great idea! Will definitely give this a go. Keep up the good work :)
Ah, so this is super wide-spread. I usually fry my tomatoes more till they're mushy. In season tomatoes (farmer's market in the summer) tend to make better soup. Then I pour in water and when it mixes with the tomato juice, the soup turns super orange red. when the water boils, I add in raw eggs, and if you pour it in slowly instead of all at once, it turns into strands as it solidifies in the water.and then scallions. And salt. Takes more like five minutes instead of twenty. And I mix it with cold rice instead of with noodles, so you get warn soup and rice. I like my method, but it was really cool to see your method as well. ^^
Oh... so that's how you put eggs in the soup! I was going to crack it directly into the soup and whisk... Ok, then. Thx for sharing your culinary pearls of wisdom. ʕ•ᴥ•ʔ
Wow, this looks good. I was just thinking today about having seen so few tomatoes used in chinese food, so I'm glad to see this idea. Gotta say that at first you had me laughing with the spoon of hot chili oil... and by the third spoon I was saying "OMG".
I am not sure, but as a snob of green bean dumpling soup. There is many ways to eat it. Some like it thin, some like it thick. But in general he did a great job of making a dish and discussing how to change Scallion or green onion seems required, he must just not like them
@ things introduced by You to me, in your episode 10 Chinese things you must keep in your kitchen, one was black vinegar and other one was chilli oil and I was able to find them, and love them, love them

Ok, at first I thought "um...scrambled eggs in SOUP? ew..." but by the end...yeahhh...I'm SO making this! I'm heading to a HUGE international market on Sunday (Jungle Jims in Ohio) - I MUST look for the vinegar to make this!
Awesome.... Because of you i've made this several times also for my kids and friends :-D But do not say it taste better than RAMEN! It's just a difference taste. No comparison .....

Love these northern home cooking recipes. I use scallion oil instead of plain, so good.

I made this, tasted AMAZING! added some soy sauce and tabasco instead of hot oil and black vinegar. Tasted AMAZING!!! thank you mikey!
So you didn't make this, you made something similar to this.
Showed this to my wife and she remembered her Mom used to make it when she was a kid. I decided to make it for her tonight and she loved it. Did not use the black vinegar since we did not have time to hit the Asian market. This is a keeper for us. Please keep the recipes coming. Thanks!

Rika Chan yea I dont think this is a HK thing, go try it :-)
because I'm lazy I did it this way and it worked out pretty well:

Rabbit Carrot my fav easy good go to dish

Alice Wu you from Xi'an? yay! Lao Xiang!
I made your tomato egg rice several times already. So good!!! Will try this!
YUM!

Bridie Granger Why are eggs considered vegetarian in the west?
Because the hen doesn't have to die to provide them.
Just eat..care less! Life is so short...

Dude, you are pleasant to watch in these food videos. I have not seen one yet that I haven't enjoyed.

Egg+Tomato+beef is a great combo. Goes fantastic with rice too! Never seen it with quite so much soup :P

Alele 阿乐乐 hehe that would make it into egg drop soup...with noodles
bae .. i will cook for you ..luke
luke cage great, thx!
ᗩᒪITᗩ ᙭ᑌ if you beat the egg and drizzle it in while the tomato and broth is boiling you end up with egg drop soup which is just as good
Yes, i know that now, Thank you! :)
Wow, this looks good. I was just thinking today about having seen so few tomatoes used in chinese food, so I'm glad to see this idea. Gotta say that at first you had me laughing with the spoon of hot chili oil... and by the third spoon I was saying "OMG".
I would have boiled the noodles in the soup, it will also thicken the soup and the noddles will soak in the flavour. I can't wait to try it!
some noodles are really starchy, it might taste weird in the end. I would use a bit of the noodles water though
Some girl will be happy to be the lucky lady. A guy who cooks is a keeper!
looking at you making excuse for yourself to add more hot oil is hilarious haha. I am starting to add hot oil to my noodle soup too because of you
Thuc Linh Nguyen do it!
Looks very tasty!
I am not sure, but as a snob of green bean dumpling soup. There is many ways to eat it. Some like it thin, some like it thick. But in general he did a great job of making a dish and discussing how to change
Scallion or green onion seems required, he must just not like them
Man that looks good. Lol, enough for 4 people...or Mike Chen.
Love the chop stick noodle twist. I've been making way too much of your hot oil. Turns out, it's the ultimate capsaicin delivery vehicle. Wow.
just made it :) awesome! tyvm for sharing

Google translate tells me you are eating an old godmother on the side.
Should I be worried?
Dragon Curve Enthusiast HAHAHA "old godmother" is a brand name for a chili sauce, which was formulated by an old godmother
Haha! Makes sense.

I went shopping for noodles and speak very basic Mandarin my cashier spoke Canto and English. She smiled and asked me what I was going to make and I told her Tomatoes and egg soup. She looked at my noodles and laughed and said here let me help you. She stopped what she was doing and took me to another isle and picked out some Baan Tyau noodles and a bottle of some red sauce. I told her I was using hot oil and she said the red sauce was not spicy so it would work great with hot oil. It was totally amazing when done!
Ok, at first I thought "um...scrambled eggs in SOUP? ew..." but by the end...yeahhh...I'm SO making this! I'm heading to a HUGE international market on Sunday (Jungle Jims in Ohio) - I MUST look for the vinegar to make this!
Ahh that homemade hot oil looks amazing! I think I might try to make that myself (just don't want to make the house smell like grease for hours)!

Any recommendations on alternative bouillon I could use for this dish? I'm vegetarian so the chicken would not be suitable, thanks! great video :)
Cameron Welsh Actually there is a vegetarian mushroom version

I want it. Going to try for dinner:)
try adding in minced garlic and chopped cilantro right before serving. you are welcome.
I added soy sauce instead off the vinegar just normal soy sauce and it tasted beautifully
did the same, even added some tabasco. Tasted SO GOOD!
Thanks to your videos I lately got rly interested in chinese food...mhm, I think I'm going to try this soup today! :) It seems like a simple recipe for a rookie like me :D
(I'm btw almost virtually convinced I need a rice cooker now, too ^^'' I never realized one can do sooo many things with it! haha)
Gina Belmont yea you do!
oh man mike this looks sinfully good, holy cow...keep the recipes coming, seriously, i'm going to go home and make this, it looks amazing! what size sauce pan did you use? i fear that mine may not be deep enough >.

Hi Mike! I love your videos, but I'm just wondering what the reason is that you don't add the egg almost at the end like with egg drop soup. Is this purely a texture thing?
This video makes me want to go back to my mother's hometown (Lanzhou) just to eat...
You know, I'm a dude, and I have trouble with complicated recipes.. Your recipes are actually pretty easy to follow.
If I were you, I wouldn't have put all those noodles into the soup at once unless 4 people were actually going to eat it. I'd put the left over noodles wrapped up separate in the fridge.
that was a huge splash of sesame oil. lol well i guess thats why you called it a splash. this looks so good. Ill try it sometime in the future
IluvHKong do it! it's awesome!
This is my favourite chinese noodles dish.
great video mike. thumb up.
I just tried this (without seaweed) and it was absolutely delicious! But you did forget a very important ingredient Mike, no asian soup is complete without pepper!
