You can also use a glass weight to help keep the food under the brine. I'm fermenting carrots right now. It's fun and easy!
That's a great idea, thanks for sharing. I learn just as much from you guys. Carrots are on my list to do very soon
I’ve been fermenting for a couple of months, and some sort of ‘weight’ is pretty essential to hold down your veggies and keep the top of your ferment from molding. A big cabbage leaf folded up and wedged in to fit is good, glass weights are great if you have ‘em, but some people just clean up a flat-tish rock, boil it to sterilize, and set that on top. I’ve also seen people use tiny little jelly jars, which work great because as the liquid rises with the formation of carbon dioxide, it just fills the little glass jar instead of oozing out of that tiny hole in the top of your fermenter lid. I made “pink pickles” , aka French breakfast radishes pickled, with my 5 year-old daughter a couple weeks ago. Watching you and your daughter took me right back to that sweet afternoon.
That's so great! Charlee would love "pink pickles " I love teaching her the importance of using the food we grow
I have a recipe just like that but it is for carrots. I cut them into spears and the kids go nuts over them. They taste just like pickles.😋

Ahh so sweet! I have an almost 2 year old daughter who is my garden helper and she is as obsessed as I am with going out to our garden. I've been sad that she's growing up so fast and not a baby anymore, but seeing Charlie and the fun things you're able to do with her gets me excited! Who would've thought a video about fermenting would give me goosebumps and make me tear up. :)
Awe how sweet. I loved the baby stage but being able to interact with her at this stage and share my passions with her have been a total blessing as a mother. Praying you and your daughter make lots of sweet memories together
You are such an inspiration to me to speak kindly to my kids and just get happy. I have little kids too. I want them to be involved in our farm as well.
Girl I try my hardest but let's be real, sometimes momma has had enough, lol. I do encourage you to get the kids involved. For me I know I may not get as much accomplished or as fast when the kids are involved, but I'm trying to make memories when I can. Happy Thanksgiving to you and your family
I haven’t tried fermented radishes yet, but I LOVE pickled radishes. Need to try these too, but that will have to wait till spring.

@@WhisperingWillowFarm learn something new all the time ... our state cottage food laws requires us to use the book Fermented Vegetables by Shockey when selling ferments. For personal ferments I experiment ... just made a lemon ginger spinach kraut - recipe in listed book but got the idea from Art & Anna’s fermented Kale from their online class.

I believe the fermented radishes will taste very similar to the pickled. Charlee is the best little helper

I have some collard greens fermenting now. Also some radishes. Tonight is two weeks fir the collards and they have a very unique flavor. I’m liking them. I’m gonna let them go one more week.

Radishes are amazing as kimchi we have a local farmer here in Ashland Oregon that uses grated radish for theirs.

You are going to love the fermented radishes! I add garlic and thyme (and peppercorn) and we all love them.
One thing you might like to keep in mind though: I added dried herbs the first time I made them because I had nothing else and of course they floated at the top and anything that floats at the top will eventually get moldy, but if you eat them for Thanksgiving that‘s not a problem, they just won‘t store long outside the fridge - which ferments normally do. (Or rather, they will still store, but you might have to take the mold off the top before you take out the radishes)

Charlie is just adorable and beautiful... 😍... ... try to put a 4 oz jar inside your pickle jar to keep them under the brine... that way they won’t mold ... or some glass weights... you will be getting some tomorrow 😄😄😄😄

I will definitely have to look for different radishes. I've only ever seen they typical ones that are in the stores. The dark pink ones. What type of radish did you plant?

Hey.I noticed the inside of your pot has most of its coating gone. If it was a non stick pot that’s very unhealthy to your family even if it’s just heating water....just thought I’d let you know......🤓
Thanks for the heads up. Unfortunately most of our pots and pans are older. We mainly use cast iron when cooking but occasionally use the others for certain things.

Nathan eats them raw and loves them. This time of year he says they are milder and not as spicy

We haven't tried toasting these yet. Nate typically cooks them in a cast iron with carrots, green beans, and cabbage. He calls it a veggie medley 😂
Did you just pull that lid out of the bag and didn't sanitize it? I hope it doesn't mess up the fermentation process for you.

I'm new to the world of fermenting too and I have a question... I hear about people saying to just get fermented foods in your diet, but isn't the whole point of these foods to have LIVE bacteria in it? If this is the case, then doesn't that mean that sour dough bread (that has been baked) and store-bought kimchi or sauerkraut (that had been canned) not really any better for you than regular foods? Only homemade fermented foods would give you those benefits, right? or am missing something? Thank you Jill for making this post. I BOUGHT extra radishes that were on sale to try this with because my garden sucks and I couldn't even grow radishes. Lol
First of all I love your name "The Growing Gardner" I truly believe all gardeners are continuously growing so keep it up❤ Although store bought has been canned or processed, their is still good bacteria in them. You are right about home fermented being better. In the process of fermentation, you still have to refrigerate after a certain time to kill the fermentation to prevent it from turning sour or vinegary
