The chicken - I think there are a couple of things. Firstly he used corn cakes rather than rice cakes - so the colour was always going to be slightly off. You also probably need to spray each of the tenders with oil to get them to crisp up through baking, otherwise you risk the chicken just steaming the coating as it cooks. This would also probably work better in an air fryer or being cooked on a wire rack.

    • @papaspaulding

He also used a cheese flavoured corn cake so that with the spices added already had that 'chicken nugget' looking colour to it before they were even baked

Spot on! I’ve actually made this exact recipe using cheese corn thins & like shown in the video & they turned out great. Due to cheese corn thins being that colour it makes a big difference in how the nuggets end up looking & tasting, rice cakes work too as mentioned but a cheese flavoured rice cake would be the better option & air frying it makes it even better!

do you happen to have a recipe for it?

    • @carolineTwhelan
      @carolineTwhelan 2 роки тому +11

@@TTorace it’s really easy, you can just do 2 scoops of your favourite protein powder and then some sort of milk. I do a chocolate one with chocolate almond milk, protein, 1tbsp dark cocoa powder, a bit of agave syrup or monk fruit sugar, a splash of coffee and then once it’s frozen and mixed I ad a little bit of of brownie mixed in by hand (the mix in button chops it up too much). Use the lite ice cream button. I noticed my vegan protein doesn’t work, it turns soupy, but whey isolate seems ok.
Another one of my favourites is 2 scoops vanilla protein mixed in with a bit of almond or regular milk to make a sludge like consistency. Then I blend it with a containers worth thawed strawberries, half a lime, and 1 tbsp monk fruit sweetener or agave syrup. Let it freeze then use either the lite ice cream or sorbet button. It turns out so creamy and rich!! You can mix some more strawberries into it using the mix ins button or add something a bit more caloric if you need a good treat. It’s my favourite.
Honestly you can just play around with it and add really any combo you want. It ends up being super rich and silky, and as much as I like Greg’s anabolic ice cream I get super bloated and grossed out half way through it lol.
Oh!! And if you just want something low calorie, you can just dump a can of pineapple with its syrup or mandarin oranges (any canned fruit packed in syrup, not water), freeze it and then use the sorbet button. It turns out so smooth and somehow creamy! It’s amazing.
As you can tell I am very passionate about my ninja creami hahah.

If you made the tofu yogurt with silken tofu instead and put it in the fridge for a day or two ahead of time, the flavors have more time to develop and it gets so much better. It also changes in texture a little bit because the acid almost causes a fermentation, and you will see little bubbles when you cut into it with your spoon that gives almost a whipped texture. I use silken tofu with an acidic ingredient and other spices to make all kinds of things From yogurt to sour cream and even mayonnaise. Another trick to make it smoother and not at all gritty, depending on your blender, you can add a quarter teaspoon of xanthan gum. Xanthan gum is used to improve the mouth feel of many foods and sauces that we already consume. It just creates a silkier smooth, feel in your mouth.

Whenever I use cucumber in salads and stuff I make sure to scoop out the insides, because I really love the crunch of cucumber (also keeps well much longer) but don't like the wateryness it usually brings to a meal.

A lot of people will probably say tofu, but i think cauliflower has just so many uses for being low-carb friendly as well, i've made cauliflower rice, and my favorite is cauliflower mash, i put greek yogurt in it and make it anabolic, tastes so goood honestly, i like it better than regular mash, it goes good with most meats too, ribeye or pork chops, salmon, chicken.

As an Italian, I personally feel disrespected by that first one. It also just disrespected my Mimi so much and all of my ancestors. I do not condone this. I was squirming and yelling at him the whole time about the “dough” and the “sauce”. The “sauce” was most certainly not authentic. And the second one, I just don’t even know how he somehow brought my Italian Mimi into it when it looked like Sushi on a cucumber. I just feel violated.

For the chicken nuggets I use ground up pork rinds. Don't grind them too fine as they will begin to get moist. You can't taste the pork, but they are crispy. I use an egg white wash, and add cayenne, paprika, black pepper, onion powder, and garlic (and sometimes cumin) to the rind mix. Basically no carbs at all. Very low in fat. For Keto, I used butter wash instead of egg white wash.

For the chicken nuggies.... pork rinds!! They even sell them pre-smashed now. Throw some seasoning of choice in there, dip in some egg then in the pig sand and bake. So crispy and delicious!!! I make ranch with Greek yogurt and mix in a little buffalo sauce. Delish!

I followed the nugget recipe and Air fried them with parchment paper on the bottom of the “tray” for easy cleanup. Definitely a winner 😍Added some dill and chili powder in my coating. VERY crispy. 380° for 8-10 minutes, turning halfway (timing subject to how large your nuggets are).

Thoughts on the nuggets at the end: What if we were to sear the chicken off, slice, dip & batter, then air fry to crispy outside? The searing may not be necessary if the air fryer won't burn them before they cook on the inside. Just trying to think of a way to make them crispy.
Also: Cauliflower >>>>> Tofu. Tofu's initial texture is just awful. Cauliflower has the added benefit of being edible without having to do anything to it, at the very least.

Tofu is def more versatile. Also instead of a cucumber, romain lettuce cups, a nori sheet with chopped cucumber on top of your rice and protein. For a vegan plant based dressing options a little drizzle of tahini with tamari, chili and ginger.
