This translation is good and thank you for it. However a mistake is made, lievito naturale isn't yeast but natural sourdough. The quantity of yeast indicated in the recipe is way too much. Regards

Yes 250 g lievito naturale- he is using 250 g of starter, not straight yeast of course.
Didn’t mention when to add in the flour for 2nd dough
Lievito 250g!!!! or 25g?
He adds honey to the batch he is making but it doesn't say how much in the ingredients.
