- Southern Squash Casserole -- Fresh From Our Garden -- Marie's Favorite Recipe
Southern Squash Casserole
Ingredients
• 2 to 3 lbs sliced yellow squash
• 1 stick butter (½ for the squash and ½ for the top)
• 1 cup shredded cheddar cheese
• 1 small onion diced
• 1 teaspoon salt
• 1/2 teaspoon black pepper
• Pinch or more cayenne pepper to suit your taste
• 1 small can of green chilles drained
• 1/2 sleeve ritz crackers, crushed
• 10.5 ounces cream of chicken soup
• Optional: ½ cup mayonnaise or sour cream (makes it creamier)
• Optional: Garlic or Garlic powder
• Optional: use diced bell pepper in place of green chilles
1. Preheat oven to 350 degrees F. Spray a 2 quart or 9x9 inch baking dish with nonstick cooking spray.
2. Slice yellow squash into thin pieces.
3. Dice the small onion.
4. Add squash and onion to a pot with water
5. Bring to a boil, and cook until fork tender; drain.
6. Add the remaining ingredients, starting with ½ of the butter allowing it to melt from the heat of the squash. Stir to combine.
7. Pour into the prepared dish.
8. Put crushed cracker crumbs on top
9. Pour melted butter on top
10. Bake for approximately 30 minutes or until golden brown and bubbly.
11. Serve and Enjoy !!!

Yum!! I haven't had squash casserole in over 3 yrs since my mom was killed in a car accident. She made the best!!! Actually everything thing she made was the best!! Except maybe her chicken chili...lol that was a disaster 😅

Your shirt is cute Marie. Your summer sqaush did good and looks nice. I like the blue polka dot dress the best. I don't think I have ever had squash casserole. Looks good. I will have to make it sometime. It is similar to my brocolli casserole except this has yellow squash.

So my hubby and sons loved this when I made it last month. Guess what I did for dinner tonight?? I made it again but added cooked shredded chicken and some fresh mushrooms I needed to use up because I wanted a one dish dinner. Sooooo good!! Thank you again for sharing your recipe! O my goodness Marie, I am going to get some squash tomorrow so I can make this.And I am not going to try to half it. I will just freeze it. Love ya.
Actually, I like both of them now the black of course with the black shoes or you could wear white shoes with that because it’s a total basic and again I would take and since it’s summer, you could wear a white overlay send over the top of that like a little jacket, Ithink that com Shrubs. You could wear black over the top that black dress with the black shoes or go with the white and they were white shoes didn’t actually do properly. If you have any white in that brown outfit, you can actually wear white accessories or the brown either one’s gonna work I don’t know Kent look at it close enough to see if it has a leak caramel color, khaki or something you could always go with that color two with a coordinate

I love that slicer you're using. Oh, now that's a hard choice. I love both dresses, but if I had to pick, I would say the first one. The one with stripes on top and polka dots on bottom. Ask for the white blouse that you have. I would find a pretty skirt to wear with that that would be really neat now, but you can almost get a little vest to wear over it that would coordinate fort fall.

If it’s bright sunshine, wear the blue and if overcast the brown or vice versa~I am a lot of help ...leaning to brown and blue when Baby Girl gets here! Both are great choices, rest easy & I hope this is biggest dilemma you guys face all year! I love squash casserole too~I could be totally satisfied w this dish as the only item lol

Your glads look beautiful. It's great that you have all that squash from your garden. We have critters so I only have planters with tomatoes, basil, and dill. Your lovely personality will show through in anything you wear. I will try the recipe with both yellow squash and zucchini when they are in season here. My Mama loved this casserole. I have been trying to find someone that made it more like she did. I knew she didn't use sour cream, which so many recipes use. It was mayonnaise! If I were you with the dress that you’re holding up was it you said it was brown it’s something it’s it looks white and got some white or something in it but I would do is wear that and wear an overlay on it. Go find you what they call a kimono or a of some kind of an I didn’t like a little jacket over that and that would be really cute that match your shoes up like with baby brown sandals to go to coordinate with your dress just wear earrings and then if you have a cute or pretty necklace that would show I would wear that with it been in retail for over 40 years, I have a degree in fashion merchandising.
Coordination of clothes for slicing and we always had color Wilson what looks good people and how to coordinate everything that goes with the outfit. Pretty interesting actually
