Not to belittle anything. I personally feel it tastes just like Maharashtrian food, but with a little sugar and a bit of rice in Jowar bhakri. But the problem in Maharashtra lately is the unavailability of authentic Maharashtrian food. They just make it terrible in restaurants. Solapur food is the same as North Karnataka food, but somewhat better. But Karnataka makes it available to everyone.
Washing a banana leaf will serve two purposes..... One, it cleans the leaf (even if it is already cleaned) and two, the water used to clean and put on table will help the leaf get stuck to table while you have food.

Try Davanagere Benne Dose in Jayanagar. Also Bidadi Thatte Idli is outstanding. Subz/Chutney Chang in Jayanagar is great. Jayanagar 4th Block is haven for food.

Wheat is not considered good these days. Jowar is a millet hence very good for health especially gut. Always prefer millets mixed roti. Ask your house maid to cook millets roti with 40% wheat and rest millet like Ragi, Jaun, Jawar, Soya floor and many others.
India is a beautiful country. Tropical climate and amazing variety of fruits. The culture is balanced with Western education for professional growth and Indian culture preserved by families. Everything you have experienced so far is great but beware of ONE thing - A lot of foreigners come to India to discover spirituality and there are just too many crazy god men here who trick people into joining their so called aashram cult. Be careful here, enjoy the food and culture but always trust your instinct and don't fall for anybody who induces you to join any aashram cult following.
Rameshwaram is the worst overar rated cafe in the world. The food is expansive and below average.many ordinary eatery in Bangalore serve better dosa,idli and other Karnataka delicacies.
Namaskara: I love Bengaluru because I was born and raised here. I try to visit as often as possible. I do have in-laws still living in the Tibetan refugee camp in Bylakuppe. You should visit Bylakuppe which is a little Tibet in itself with beautiful monastaries. Also being adjacent to Kodagu you can visit some breadth taking coffee plantations, sceneries and sites. They have some fantastic resorts, I recently visited Evolve Back Resort back in March of 2023.

Rice Shyavige is also prepared at home (a bit lenghty, messy tough process yet end results are always good)
