    INGREDIENTS
    Egg rolls
    2 tablespoons dried wood ear mushrooms
    1/2 bundle (1.8 oz / 50 g) mung bean vermicelli
    2 tablespoons peanut oil
    4 cups shredded cabbage
    1 cup shredded carrot
    4 scallions, sliced
    1 thumb ginger, minced
    3/4 teaspoon salt
    1/2 teaspoon sugar
    1/2 teaspoon white pepper
    1 tablespoon sesame oil
    1 pack spring roll wrappers (thawed if using frozen)
    Vegetable oil, for frying
    Dipping Sauce
    2 tablespoons vegetarian oyster sauce
    1 teaspoon Chinkiang vinegar
    1/2 teaspoon soy sauce
    2 teaspoons sugar
    2 tablespoons water
