    If the dehydrator smells like smoke (or any other strong flavors) a trick is to deydrate potatoes in it. The potatoes will absorb the strong odors.

    My family loves BBQ anything. I will take a piece of top sirloin, chicken breast or pork chops. I either make a foil pan from heavy duty aluminium foil or use a store bought foil pan. Place your meat in...add peppers, onion and garlic. Whatever your family likes. Add water to just cover the meat then seal with foil. Cook till tender. AMAZING!!!!! I'll pop some baked potatoes and corn on the cob onto the grill too. Mo mess meal. I mix peppers for different flavors. Also...for convenience sake I freeze bags of mixed peppers and onion. I can just grab a handful as needed. Love watching your show. I can see the love in your family. Beautiful...

    Hello Sarah! If you want to make adobo for your chipotles because adobo is not just a tomato sauce, here is the recipe I use and it is delicious, if you want to try it:
    Adobo for chipotles.
    This process will take some time, as the concoction will need to boil at a low flame for some time. But the result is wonderful!
    Ingredients:
    100 grams red chipotle
    2 (whole) chile ancho (anchos are dried ripe poblanos, which are sweeter and red)
    2 (whole) chile pasilla
    ¼ cup chopped onion
    1 garlic clove
    2 roma type tomatoes bre-boiled
    For seasoning, we use about: 1 tsp oregano, 1 tsp clove, 3 or 4 laurel leaves,
    a pinch each of: marjoram, thyme, allspice, black pepper, and salt
    We will also need white vinegar (about 1 cup)
    (Feel free to adjust the seasoning to your taste.)
    Instructions:
    In one pot with hot water, place the chiles ancho and pasilla and allow them to rehydrate whole as they are, all night.
    In another pot, do the same with the red chipotles.
    We do it separately because we will use them at different stages.
    The next day:
    1. Blend the rehydrated ancho and pasilla chiles with some of their water, the garlic clove and the tomatoes. Blend them real well as we will pass them through a strainer, so that we don’t waste any of the pulp.
    2. Place a pan on the stove, and add about 2 cups of olive oil, turn the flame on low-to med heat.
    Drain the blended - sieved sauce over the oil in the pot. Mix with a wooden spoon, slowly and thoroughly. Make sure to clean under your sieve/strainer for the pulp.
    3. In a pan with some oil, add the onion, and when it is translucent, add it to the adobo.
    4. Season the adobo.
    5. When it comes to the boil, add the cup of vinegar, let it boil a little, mixing softly with the spatula, and then you may add the drained CHIPOTLES.
    6. Let the sauce boil at a med-low flame for about 45 minutes. This will allow the chipotles to cook in the sauce and the flavors of both will merge and the sauce will thicken. We want the chipotles to remain whole, so careful not to smash them.
    7. Now you can use your sauce in your dishes, or put it in your glass jars for storage in the fridge.
    Hope you like it and enjoy it as much as we do!

    If you make adobo my favorite way to use it is I sauté shredded carrot, onions and a lot of cabbage in butter and add the adobo a splash of vinegar and smoke fish. We cook it down and eat it on tostadas with a little lime over it. It’s delicious

    Get a grinder and chop some up and put them in there. Then, over your savory snacks, or just your portion of something, grind some of that lovely goodness on to whatever you want. This video was so relaxing. Thanks for that.

    This girl really likes chipotle peppers and so do I. In central México we use these peppers to prepare quite a bit of dishes.

    Good morning Sara... I have prepared at least a million peppers in my life (and yes, I know about the gloves) but a spoon to the scrape the seeds never crossed my mind...DUH. Learn something new every time I watch y'all and I've already got 74 years worth in my head. My Mama said "You're never to old to learn" and she was right wasn't she. Bless y'all, Oklahoma Grandma

    How about making a salad dressing with 1/2c oil, 1/4c key lime juice, chipotle pepper flakes to taste, fresh cilantro and a bit of honey and Mexican oregano!

      I change it around from there but very similar to my base for many grilled dishes. Lots of home dried chiles to use.😁😁

    Hello Sarah, if you place the smoker racks in a garbage bag and a rag with ammonia on it, seal the bag for 24 hrs the grills will be much easier to clean. Just put the ammonia on the rag you don't have to worry about spraying it directly on the grill. Hope this helps.

    I'm not a real fan of chipotle peppers in adobo (bought canned version). But this video may make me change my mind. Hickory smoked jalapeños - in homemade tomato sauce - maybe not the "recipe" but certainly delicious sounding. I'm going to try it. My husband just bought an electric smoker. (FYI! Whole potatoes take forever, never truly cook and aren't that good.) What makes me so satisfied with you and your family and lifestyle is that you are so real. Love when you get excited about a random squash. It reminds me when I found a little bunch of red potatoes in my compost heap. This older lady (64) in the middle of a big city can learn and appreciate what you do. Really. ❤️

    I'm not on a homestead, and in fact, live in a townhouse without a yard. In spite of that, I've started indoor gardening and want to give peppers a try. This video inspired me to check out indoor smokers, as I'm always looking for ways to "homestead" without having a yard. ;)

    I read somewhere that after dehydrating onions to get rid of the onion smell on the dehydrator to do a batch of potatoes in it .....maybe that would work for peppers as well if there is a lingering pepper smell.

    If you make a fish soup.. you can chop up the chipotle pepper and use it in the base or rouge you make up for your soup.. they give it a great smokey flavor..

    Grind the Chipotle goods, and make a rub for your rabbits with garlic butter,into the air fryer. Add the Chipotle to a brown gravy. Make a stuffed baked potato, and smother it in Chipotle gravy. Then take a can of nasty store-bought green beans and fry them in olive oil and Chipotle dust. You asked for recommendations, now do it. Yum!

    Sara ! you are beautiful !! We use this in our Indian cuisine for seasoning. In ghee or hot oil, either put mustard seeds or cumin and then a few of these and then go on to make the veggie/curry whatever. usually I just saute vegetables in that oil. I also put some turmeric, with a hint of pepper for the turmeric to be absorbed, 1-2 cloves salt and my veggies are delicious.

    Hey Guys, I just made some chipotle chilies with nadapenos! It allows me to make my typical chipotle salsa with regular chipotles made rom jalapenos, but I use the nadapeno chipotles to add a burst of flavor without adding even more heat.

    Grind some up into powder or flakes: Add the powder to a pan and heat for a while with oil. Add flour and make a roux. Then add chicken stock and cook it until you like the consistency. Sweeten a bit after. Makes a great sauce for enchiladas.

    In a small, personal blender, I make a smoothie designed to boost metabolism and increase body temperatute. I wash, core and cut up a fresh apple leaving the skin on it. I add a clove of garlic, some fresh ginger, a Tbls of siracha sauce and a Tbls of apple raw apple cider vinegar. I add water to cover and blend it all together. It is quite tasty, and you will be surprised how well it works keeping you warm.

    Tamales! Boil, blend with some water that was boiled in, strain if you'd like, refrigerate over night and it turns to jelly, easy to use tamale sauce for the meat and masa! We mix the masa in with sauce for extra flavor.

    I love making Alton Brown's chili powder. Some smoked Chipotle peppers in there would be great. I make it in its own jar (you know a blender bottom fits on a canning jar right?) and let it sit for an hour or so, otherwise you can make tear gas as well, LOL. Don't ask me how I know!

    Hey good morning I love your videos. I have 2 suggestions. 1. A coarse grind and shaker bottle. If you use parmesan cheese in a shaker bottle that lid should fit a quart jar. 2.can them in adobo sauce. I don't have a recipe but I know my mom used to do it and it was amazing!     light a campfire to enjoy in the evening and while your sitting around it put those smoker racks into the fire. when the fire is out and cooled down (next day) your rack will be clean of any accumulated oils, cooked on fats. Works on cast iron too.

    I use the peppers when making barbecue sauce also in Mexican spaghetti and actually and squash dishes just to spice him a little and they're actually good to put a little in sweet potato dishes

    I had a very good harvest on my peppers too,especially the jalepenos. We have a smoker just like yours so I'm going to smoke mine too.I never thought about doing that.I made 2 batches of cowboy candy and still have a bunch!!     Clever way to clean the seeds out!! Great vid :)
    One thing I learned years ago about using used lids is that any lids canned in the water bath canner are safe to reuse (esp. jams, fruit-low time foods), but not lids that have been used in pressure canning. However, even the water-bath canned lids I double-check to make sure they're not bent (from opening) or compromised. And...not to reuse for a pressure canned item.

    You can partially dehydrate them first, then finish them on the smoker. They'll still hold just as much smoke.

    I use chipotle anch and guajillo (sp?) peppers in beef stews. I put them in whole like a bay leaf and then may mash them in before serving depending on how hot the final product is.

    I also finished my smoked peppers in the dehydrator. The next day I dehydrated apples. It actually gave the apples a slight smokiness. Should be interesting when I make apple pies this winter!

    That's it. I'm getting a smoker. Those look really awesome! Our jalepenos did great this year, but they were planted late and not many were red by the time frost came. Next year I'll hopefully have a greenhouse to give me more time, lol.

    Next growing season Can u all do a step by step series on growing just peppers alone? I'm a first time grower And I been able to grow everything by seed just fine but the one thing I have not been able to grow yet is PEPPERS! I dont know why... And sense you have had SO MUCH SUCCESS, Maybe a series would be a good idea? Please consider

    I have used chipotles in adobo sauce to make a pesto for pasta. It is pretty spicy but really good. I use oil, walnuts (cuz I'm cheap), parm, and the chipotles with some adobo. grind it together and add to hot pasta.

    To get pepper oil off hand use lemon juice. Work on onion and garlic smell. After just wash hands

    We actually have two dehydrators and one is used exclusively for strong odors - for instance when I dry onion for minced onion or to make onion powder or for dehydrated cubes or slices for throwing in soups and stews and crockpots. Same with garlic - that smell takes a lot to go away - so strong herbs, onion, garlic, peppers etc - go in a different dehydrator with different trays so that my fruit leather doesn't come out with an onion flavor (which has happened lol) We have never smoked our peppers - I usually use an upholstery needle and thread and run the thread thru the tops and just hang them until they dry (on a back covered porch that is covered) - Although we are also in California and its 75 degrees today - so im not sure how well you could do that in the fall in a more humid climate.

    I hope you come out with a recipe with those dried peppers. Do you dry any other of your garden veggies? I am looking to grow more with different ways to preserve the harvest beside freezing and some canning. I love your videos!

    I run my electric smoker over night all the time. Just get yourself a nice bluetooth thermometer with low and high temperature alarms. You just keep the receiver (or phone app) beside the bed and if it drops too low or if it gets too high it will beep.

    Off the pepper topic, but I purchased the dehydrator that you are using from your Amazon shop and I like it. I've dried my herbs and some flowers and I like the results. Thanks for the suggestion.

    Those look closer to a morita chili. Also made from jalepinos and smoked. I love them in tomatillo salsa for a smoking salsa on tacos. Also good in soup. I buy a Chipotle salsa in a small tin that makes a great marinade, it is slightly sweet. I have thought about doing this myself since we use so many morita chilis.

      I did smoke my jalapenos And they came out great. I dropped the dry peppers up in my biomis in my vitamix but they were in a powder. It took a while to get everything done but it sure tastes good

    You can place your old canning lids in the dehydrator to heat them and they will make a fantastic seal; alone or when you use your air extractor. It warms the plastisol and makes it softer for a tighter seal. Greetings from Alberta, Canada.

    put the racks in a bag and pour some ammonia in them.. seal them up, set them outside over night.. next day, should wipe almost pretty clean, will still have to scrub the tough areas, but otherwise they come out almost as shiny as new

    I have learned more from you about the different varieties of peppers and pepper products than anywhere else. I'm excited about trying to make my own paprika from home grown peppers this year.

    I add adobo peppers to my BBQ sauce to make Chipotle BBQ sauce. It's great on BBQ chicken.
