Well, no wonder the food only takes less than a minute to get out. The workspace looks very clean and efficient, combined with the small menu makes everything super fast. It also helps that customers pay in cash (I heard that Japan still prefers to pay that way) and taxes are included so it's very easy to pay quickly. 🤤
My country (Iraq) still dealing with cash 99%
Paying with card is faster tho.
Handling money and food without gloves or washing hand constantly for me is a deal breaker…

shrimp undon had green onions in it when he asked not to have it. deep down im glad you did that because i love green onions and thought it was a crime that he didn't want it.

A long, longtime ago, I worked near the US Embassy in Tokyo and there was a standing Soba Shop that I would regularly frequent. I always ordered the same... Tempura Soba, no onions, with two inari-san. Because I was a regular, the shop staff would start my order as soon as I walked in and headed for the ticket machine. The shop has long since closed and the space is occupied by that FamilyMart next to Berlitz. Nice memories and nice taste! Soba was one of my favorite dishes while living in Japan.
A longtime after that job finished, I lived near Senzoku-Ike and rode my bicycle on Kannana-Dori all the way to Ikspiari... I did it during the summer... Crazy hot and I'll never do that again. hahaha.

It's amazing to see so much skill, speed and passion for creating these wonderful Soba dishes. Truly a master.
Anyone else notice that I think get got the udon order wrong? Only one was supposed to have green onions lol. So cool how he can make up a bowl so quickly and it looks delish!!

I'm 32 years old and have been a chef for 18 years. There's nothing better than watching a master do what he does so effortlessly and simply.
While it's true about communcation, but restaurant with vending machine menu also helpful for introvert / someone who just want to eat and go

Думаю, что 7.5$ за суп для китайца это ооочень дорого, если конечно это ни Пекин или Шанхай, где уровень жизни высокий. Я например часто бываю в Испании и там «Шведский стол» в китайском ресторане на человека стоит 12€ (без напитков) и ты можешь кушать СКОЛЬКО ХОЧЕШЬ и ВСЁ ЧТО ХОЧЕШЬ, начиная от китайской и японской кухни до европейской. От море продуктов и до экзотических фруктов и мороженого.
Я туда просто перестал ходить, потому что нажираешься до отвала. Глаза то хотят попробовать все, хотя бы маленький кусочек. Вообщем выходя оттуда еле ноги передвигаешь.
Так это Япония. Цена в йенах. Этот нормальная цена для Японии

Wish I had the willpower that old man had... I don't think he has amazing turn over but with speed like that and a steady flow of people and just 2-3 people, you could do a good days business.
