I wish my POS 2018 Keystone trailer was built with HALF this attention to detail and craftsmanship.
This reminds me when my kids were little, it didn't seem that long ago. It's good they see you do "Dad stuff" your patience, craftsmanship and skill is so important for them to see.

Do the plans come with a fully equipped shop like yours and a couple helpers who know what they're doing .
That was fun to watch . Man if I had the time and space . It would be a challenge and I would need to buy a frame because I haven't learned to weld . Plus I would make it a little more zombie/bear/Bigfoot resistant . Add some armament and some other options and off to the unknown .
