- In a perfect world what would be the perfect steak for you? For me there is nothing better than the best picanha steaks I could find surrounded by the best ribeye cap steak money can buy and that is what we did.
This is nothing short of the best and once you eat one of these you will change the way you look at beef and open your eyes to a vast and new horizon!

@@SaltyTales 6 hours, but I forgot to take photo's. :( I did one Med rare and one Med well using 2 sous vide baths Lots of salt, pepper and some garlic powder for a tasty crust!

Don't know what you'd pay at the butchers for it but costco had ribeye cap steaks for sale like 6 months ago and they wanted like $46 a pound for it. They just sliced the cap into strips and rolled the strips up into little medallions and tied them up. Probably good, but $46 a lb good...?...
@@shawnbowen6833 Yeah, at $46 per pound it would be a one time purchase just to try it. Same as the time I spent $297 for two Japanese Wagyu steaks. They tasted great and I was scared to death cooking them because I was afraid of over cooking them, but like I said were a one time purchase to taste real Japanese Wagyu for myself. I'm glad that I tried them because the butcher that sold them doesn't carry them anymore. Not much of a surprise that they weren't a good selling item.
This cap was about 0.9 lbs and it was $15.99 the pound

You are still knocking the ball out of the park! That looks DELICIOUS! I do have a challenge for you. With all the leftovers that you have I know that you have to eat them at a later date. I have difficulty reheating leftovers and getting them to taste as good as they did strait off the grill. My challenge to you is to reheat a meal and compare it to a fresh off the grill. To make it harder could you use chicken? I cannot get chicken to taste juicy and tender. I am curious to see what you can do? I am glad to see that your channel is taking off. You and Mrs. Ninja should be proud!

I actually love the eye of the ribeye more lol. The cap can be a bit too fatty for me, but that eye is way more tender than NY strip and just enough marbling to be delicious and tender. I do really love picanha though! Especially prime, because it is perfectly tender with not too much fat.

I dont believe in resting the meat. I do lose some juice when i cut it but it feels jucier and taste better right off rhe grill.

It's about time you made the perfect steak, how many times have you said that before??? 😉
When I can afford to buy a whole ribeye and peel the cap and two or three "queens," as well, I'll try it, too! 😆
Two things... One, be sure to explain to people where to trim the queen at the right vein, a lot of markets don't do that, just like not all beef tenderloin is actually filet mignon. That cut is only a small portion of the tenderloin (hence the term "petite filet).
And two... Try setting your sous vide 129°f.. Also, let them rest *before* you sear them. Try that. Then, when you sear them (try one minute per side, four minutes total) that brings back the heat without raising it too high in the middle. Would I "steer" your wrong!? (get it... "steer") 😆
Your way takes the steak past my ideal 134° total temp and the rest afterwards means it's not sizzling on the plate. Plus the juices juice redistribute better resting before the sear. And the "one minute flips" over your screaming hot fire won't take the heat too far in. I would never lie to you, Ninja. Just like I didn't lie about the turkey. ;) 😆
Okay, continuing linguistics for chefs...
I figured this out, how to help you. When you say "delisshhhous..." you need to relax your jaw, do not let your teeth come together, say it slowly and you will be able to say "delicious" and not "delitch-ous." 😉
Try that, buddy. We'll get you fixed, yet! 😆
But seriously, try keeping your temp to 129°, maybe 130°, tops then let your steaks rest at least 20min., *then* sear, one minute a side (x 4) I promise, you'll write me back and thank me.
For those quality cuts you put together, the last thing you want is overcooked and not sizzling hot when they hit your sizzle plate (I always use sizzle plates!)

😆 Yes, I know they sell it separately, *if* you can find a butcher shop in your neighborhood.
We don't have the big, high variety markets, once you get up out of the Miami, San Francisco, New York type places. Even Atlanta, though we have a couple farmer's markets, don't have places like Broward's. meats. The grocers won't have it. But we can order it from a decent butcher, with my "buy a whole ribeye" coomment. I was just being "flippant" (snide, sarcastic... Okay, a smart ass!). 😆
But I was very serious about those two things making a huge difference by resting the meat *before* the sear and the "flip every minute" bit. Try it!
And I know you do appreciate it, seriously, which is why I do "pick on you" but it's from a sincere place and I am the same way. I'm always listening and learning, which why the few words of Spanish I *do* speak make people think I actually know what the hell I'm talking about! (Nope!) hahaha I'm lost by the second sentence. I just used to work as a carpenter in Atlanta and had to be able to ask/answer simple, one sentence questions. 🙃
My parents tought me when I was young, not to be so full of self pride that I "revealed in my ignorance," as do so many others I know (aka "Trolls" 😆).

That gives you trouble sometimes and I see you physically pause and struggle a little, even if trying not to be obvious about it.

If you cook something, it is "cooked."
You often say "When it is cook..." when you mean "When it is cooked."
Tenses are very simple yet important and trip up the ear of the listener. So fix your "-ish" sound and learn "cook, cooking, cooked" (or do, doing, done, etc., etc ). And "The ten dollar roast cost ten dollars." And you'll have most of it under control! That and quit saying "B" when you mean "V" lol. (that's the last thing for native Spanish speakers to let go... )

I wonder how many people realize if you cook steak to well done then LOWER the heat to a simmer the meat returns to a tender state after a few minutes... Y'all are eating uncooked meat otherwise 🤷

I’m but I’ve never seen a tender well done steak… did you ever try mid or mid-rare? It your well dine compared to the tenderness on those?
Sear your steak like normal but use little oil. Oil starts to run low as you sear the other side, add a bit of water. lower the heat to a simmer and put a lid on it. Water runs low again, just add a bit more water. Place lid. Repeat. After about 10 mins or so the meat is super soft.

You can use broth instead of water (be mindful of sodium though)
Either way, you'll be left with awesome gravy in the pan. Also flip your steaks as the water dries up (but get some more sear from there too 😉)
I like to add the peppers and onions JUST before resting the lid for the LAST time. Hope this wasn't too confusing 🙌
