The real Singju can never be complete and perfect without Ngari (fermented fish) and Thoiding (perilla seed). Please make sure u add Thoiding and some other main veggies in ur next Singju-making video (just suggesting😇). Btw ur singju looks so tempting, sis.👍😋

Even some meat eater or fish eater won't tolerate the smell. If Thai force u to eat fermented Pork Or Oak ngari u will run away , likewise they cannot ngari.. Fermented food are not for everyone, although it is eaten in every part of the world, even the Icelandic people eat fermented fish called Hakarl other vomit when they tried it.

This reminds me of Thai and Vietnamese food. The Vietnamese do this thing called Bi Heo (pork skin salad) and Gỏi đu đủ (raw papaya salad). Bi Heo is shredded pork skin salad, with fish sauce and toasted rice. The toasting and fishiness reminds me of the cooking technique of toasted gram flour and fermented fish paste. The Vietnamese papaya salad and Thai Papaya salad (som tum) are similar they have fish sauce, lime, chilli. I went to a Burmese restaurant once and they had something similar, but I don't remember the name.

Your singju is ok as it's hard to find some materials outside Manipur but still looks yummy.. Ya singju comes in many varieties but the most authentic singju should compromise ngari,thoiding ,singju pan,thambou,komprek,colomni,chilli better with king chilli,hawai matol n some herbs n fry beans or boiled... . I think u should also try Mimi singju the latest addition with easier n testy Moder singju... 👍🏻👍🏻👍🏻
You have explained it quite well. But one thing that is very much not authentic is the methi leaves. We normally put fresh leaves of peas and never ever methi leaves. You probably mistook one for the other.

The most important ingredient is perilla seed powder... ngari is optional because in Manipuri’s feast “ushop” we don’t use ngari in singju instead we use perilla seed powder and besan.Yes, we use ngari but it is not the main ingredient. Without ngari we can still make singju . This is not false information. I think you need to research more.
