    Just scrolling the comments for the people who say that's not authentic traditional lasagne. Theres probably Italians in italy who live next door to each other arguing about who has the most authentic lasagne. Its lasagne and it looks nice. Simple.

    Made this lasagne tonight for my dad and husband. They loved it. Even enough for the in-laws which I'll freese and deliver when restrictions allow us to travel. Love from Cape Town

    Leaks in the mornay is a game changer. White sauce can be a bit boring but nice softened leeks + 3 cheeses is next level. Pinch of white pepper too😘
    I layer slices of dry mozzarella in with the white sauce as I'm building and put a splash of Worcester sauce in the ragu for a little tang to cut the richness. Top with finely blitzed breadcrumbs, fresh thyme and parmesan as well as some grated chedder for extra crunchy bits

      Even if you have just onions and not leeks, this sauce is from a different galaxy all together. I added some nutmeg and some black pepper, a few crushed garlic cloves and it was to . Die. For. 😂

    HOPE THIS HELPS SOMEONE🤞 I tried to write the recipe based on this video. This is a guesstimate & I am not a chef, so Im sorry if it’s wrong.
    Ingredients:
    Pasta sheets (fresh?)
    Meat :
    Oil (olive oil??)
    Smoked pancetta
    Bay leaves
    Garlic (1 clove??)
    Rosemary
    Pork mince -he recommends shoulder of pork (500g???)
    Beef mince (500g???)
    Salt & pepper ( a pinch)
    Half a nutmeg
    2 small glasses of red wine (between 250-350ml)
    2 tins of lentils
    2 tins of plum tomatoes
    Water (fill 2 of empty plum tomato tins with water)
    Sauce :
    50g butter
    1 Leek
    Flour
    1L of milk
    Cheddar cheese
    Parmesan
    Smoked mozzarella - not a lot (50g???)
    Prep:
    Finely slice pancetta
    Dice garlic & rosemary
    Dice carrots, celery and red onion
    *optional* Grate half a nutmeg
    Trim and finely slice the leeks
    *optional* grate the cheeses
    Method:
    Put pancetta, garlic, rosemary and 2 bay leaves into pan with oil - medium heat
    After a minute add veg (carrots, celery and red onion). Fry for 5 mins
    Push veg to side of pan & add in your meat (pork & beef). Fry for around 10 min until brown
    Season with salt, pepper & half a grated nutmeg. Add in two small glasses of red wine, lentils, chopped tomatoes and water
    Let sit for 90min (hour & half)
    After 90min get started on sauce:
    Put 50g butter & 1 chopped leek into separate pan
    Add 4 heaped tablespoons of flour, give mix and add in a litre of milk. Bring to boil, once boiling remove from heat & angle pan & use hand blender to blend
    Grate cheddar, parmesan and mozzarella into pan,
    Once melted sauce is ready.
    Turn off heat for meat & sauce. Add water to meat if youd like.
    Preheat oven to 180°C (350°F)
    Get lasagne dish, start layering:
    - Ragu (meat)
    - pasta sheets
    - White sauce
    Repeat until out of ingredients (white sauce should be on top)
    Grate some more cheese on top
    Put in oven for around 40/45 min

      Better make the lasagna from gennaro contaldo. It‘s classic italian and way better. Believe me. Try both and tell me which one was better.

    WOW, Jamie, that looks amazingly simple!! My favorite recipe so far is a bit more tedious but it involves semi-pre cooking the lasagne noodles. I like that you didn't have to do that just put them in the dish raw & let them cook in the oven. Gotta try this!! Your face when you tasted it, tho!!!

      This looks great but the issue I have with a lot of these recipes, like this one, is that you need like 80 different ingredients. At that point, it'd be about as cheap to just eat out.

    Love the recipe! I always used white beans instead of lentils and added a few fresh mushrooms, but otherwise the filling is perfect.
    But what I personally love and what really improved my lasagne is that white sauce with the leek and cheese - brilliant!

      It has no sofrito and no meat, and only mint as a herb (which is bizarre on itself). I can only think that you got paid to write something positive and didn’t bother to watch it, or even read the title.     This is an excellent recipe. Initially had reservation on the lentils and leaks but it comes together deliciously! Had to wing the amounts used but it came out really good. Wish he would of posted the amounts of ingredients

    Thanks for the recipe, will definitely try it.
    Regarding the lentils - I'm always open minded about lasagna and think that this is the dish that you can make at home with ingredients you currently have (saving the basics ofc). And in terms of taste, lentils will work great. I also remember doing lasagna by George Calombaris recipe with hard-boiled eggs (shown in Masterchef Australia S2) - it tasted great and I honestly don't care if hard-boiled eggs are considered traditional or not, or if they break some made-up Laws of Lasagna.

      If you don't forcefully scrape it with sharp edges, it should be fine. The oil in the food helps as well.

    Love the white sauce. I’m going to add a layer of ricotta/mozerrella/egg/parsley sauce as well and maybe add spinach to the white sauce
    So each layer Lasagna/ricotta sauce/meat sauce/white sauce

    I made this yesterday for the first time. You are not wrong when you say the smoked cheese in the sauce is the pièce de résistance. Sure does give it the WOW factor!

      It’s one of the most authentic recipe actually. Here in Bologne, Italy, we do it like Jamie (without cheddar obviously).

      Honestly, I've tried it before. It's not as good as it sounds. Not as good as smoked Gouda, which is delicious. (personal opinion)

    That's one thing I admire Americans for, they have the liberty and audacity to reinvent food, while we, poor children of Europe, must master our grandma's recipes and argue with the neighbour that their grandma's recipe is not as authentic as ours 🙄.
