I've tried this! I made Kaeshi & zaru soba. It was soooooo gooood! I didn't make the dashi because I didn't have the ingredients, I used chicken stock. I bet it would be much more flavorful if I use dashi next time. Thank you so much Chef, I successfully ate soba for new year thanks to your recipe. It was so easy yet so delicious!

Thanks brandon!! Unfortunately I am not sure about the supplier who ship to where you are.. Have a look on Amazon USA!! They probably have everything you need 👍
try mixing water or rice vinegar or kombucha with either sugar or honey...it's not a great substitute but may be close enough to mirin without using alcohol another mirin substitute you could try is white grape juice mixed with some lemon for tartness...again not great but no alcohol sake you can omit
