    I've tried this! I made Kaeshi & zaru soba. It was soooooo gooood!
    I didn't make the dashi because I didn't have the ingredients, I used chicken stock. I bet it would be much more flavorful if I use dashi next time. Thank you so much Chef, I successfully ate soba for new year thanks to your recipe. It was so easy yet so delicious!

    Love Soba. Cold or hot! But. I love UDON even more..........can you please do a KITSUNE UNDON video? With some Onigiri (UME and TSUKUDANI) and maybe some INARIZUSHI? Thanks, Taku-san! Those red lacquer bowls, SO BEAUTIFUL!

    I just bought a bunch of konbu after watching your video with kombu salt. But now i have a surplus. Can you recommend some recipe that need kombu please? Beginner friendly if possible?

    Made the chicken soba and it is certified 美味しい!the broth especially has a wonderful depth of flavor from the fried green onion and chicken

    too bad muslims can't make most of japanese recipe because of mirin and cooking sake

      try mixing water or rice vinegar or kombucha with either sugar or honey...it's not a great substitute but may be close enough to mirin without using alcohol
      another mirin substitute you could try is white grape juice mixed with some lemon for tartness...again not great but no alcohol
      sake you can omit
