    Hi Gino. I love the idea of Italian Express. So creative. I have travelled to Tuscany and fell in love with the countryside. The people in Italy were super friendly. The food was delicious.
    Being a vegetarian I want to try out all three recipes. The last one minus the sausages.

    Gino, your pasta water wasn’t boiling when you put the pasta in. Do you not have to wait for boiling water?

    Saffron Risotto is a popular dish in Milan and is often referred to as risotto alla milanese. It is not a traditional Tuscan recipe.

    Again, these recipes are misleading...
    1- Cacio e pepe is NOT Tuscan. It is a recipe from Rome;
    2- Saffron Risotto (with or without peas) is NOT a Tuscan recipe. Saffron is used in Milan recipes;
    3- Ribollita is a vegetable soup, it does not contain potatoes (the consistence must be given with the bread) and most of all we do not use sausages!
    Again, stop it, please, to teach people something that it is NOT TUSCAN or it does not follow the right recipe describing it as "Classic" when it is not classic at all!

    1 spoon of salt in 5 Liters of water isn't going to add any flavor. It's nonsense.
    Especially because you take the pasta out.

      A heaped tablespoon of rock salt in that amount of does make a big difference to the pasta, trust me. I urge you to try it.

    Title is 3 classic tuscan recipe. Except that Cacio e Pepe is from Lazio, and Saffron risotto is from Lombardy. Get the titles right.
