Instant Pot Vietnamese Braised Fish | Ca Kho

  • Fish will be extremely tender, so use a spatula and hands to remove haha. And if you don't overcrowd it like I did, it'll be easier to remove. Enjoy!!
    Serving size: 2-3
    Ingredients
    2 lbs of catfish steaks (other fish can be used: cod, salmon)
    For marinade:
    2 tbsp fish sauce
    1 garlic clove, minced
    3 green onion heads, smashed and chopped
    1/2 shallot, minced
    1 slice of ginger, julienned
    for sauce:
    1 tbsp fish sauce
    2 tbsp sugar
    2 tbsp kekap manis (dark/thick sweet soy sauce or vietnamese caramel)
    1 tbsp oyster sauce
    thai chili peppers (optional)
    1/2 can of coconut soda (or coconut water - add extra sugar if using water)
    for saute:
    1 slice of ginger, julienned
    1 garlic clove, minced
    1/2 shallot, minced

    isn't the fish overcooked? it had been in the boiling sauce for 13 min!

    What does the coconut soda do for the dish?

      Instead of braising in water, broth, or wine, we braise in coconut water or soda. It helps soften the fish and impart sweetness and flavor. You can use coconut water or broth instead. 👍🏼 If so, I would recommend adding more sugar.
