  • This simple cake recipe has absolutely saved us when it comes to making allergy-friendly cakes for our peanut and egg allergy kids. We can’t buy from most bakeries due to the risk of cross contamination with peanuts and then it is even harder to find someone who bakes without eggs. I used to spend hours working on special recipes, now I only do that if I am wanting to and not because I have to.

    I’ve seen dozens of these soda pop cakes on YT and you are AWESOME to give the tip about not losing carbonation.

    What I do is pour the soda first and then sift the cake mix into the soda. It has always come out perfectly.

    I do believe you are folding the mix in v stirring.
    Using a beater to break up the dry mix beforehand works great and helps to aerate it; (I use for pancakes all the time).

    Beautiful job! Looks delicious. Just wish you'd shown your fancy fork work to stir and keep the clumps out of the cake batter.

    1. Sift box mix in bowl
    2. Add small sprite and fold
    3. Bake until golden brown, no time was shared
    I really hope I'm able to find a video that explains this recipe better

    I like to make 1/3 of the cake package when I crave a little cake and use my toaster oven so I'm going to try diet pepsi =). Or whatever soda I have on hand. Thank you so much.

    Does the pop have to room temperature or cold??

      I haven’t noticed a difference, we do typically use room temp though simply because our fridge space is limited so we keep those bottles in the pantry.

    How many calories per slice of cake compared to the original recipe?

      I wish I could answer that for you but I don’t have a clue at this point. Given though that oil usually carries a decent caloric count and add in 2 eggs, I’m actually going to guess that the substitution of the soda is either similar or less than what it would’ve been to begin with. Then again, if I am eating cake I’m not usually watching the calories too closely at that moment.

    all this talking and we know how to mix cup cakes.......but how about size of a pan to make a cake, how long to cook at what temperature for a cake OR the cupcakes.

      You follow the directions on the box for that portion, you’re just substituting soda for the other wet ingredients.

      It would actually over beat the soda and remove too much carbonation, which is what helps it to rise the way it does.

      I don’t see why not, the carbonation is the most important part and the hint of flavor is just a perk.
