A good insightful video on tofu in China. Back in the UK I only really saw tofu curds/skin and soft tofu. Here in China there are so many varieties to choose from. My favorite way of cooking firm tofu is really simple. Take a tofu block about 30 x 50 mm, size is not really important except for handing. Then cut the tofu into slices about 5-7mm thick. Fry in very little oil on medium heat, until the outside is browned to your taste, the skin will be a little crispy. That is it done. Serve with a sprinkling of salt, or dip it in crushed chill/pepper flakes. Quick, delicious and the browning gives the tofu a different texture.
A lot of people say there's no vegan food in China and it would be a challenge to go there if you're vegan. But that's just their uninformed perception. There are plenty of vegetarian food in China and it's not just circled on the monks, it's everywhere if you just bother to look and ask. But then again those who say there's no vegan food never set foot in China before.
I find so many vlog about Chengdu recently, even over numbering Shanghai and Beijing. Does foreigners now favour Chengdu even more than those Tier 1 cities in China ?

It’s great man! It often gets used when making ‘fake chicken,’ because when you layer it up it makes a really fibrous, chewy texture

I can’t speak for other foreigners, but Chengdu is definitely popular! It has a slower pace of life than Shanghai, Shenzhen, Guanzhou etc
