  • Have you ever heard somebody say "eating healthy is expensive"? What if I told you that it doesn't have to be!
    "Healthy eating" looks different for everybody. As a Registered Dietitian, I try to teach people that eating "healthy" doesn't necessarily have to be organic salads and kale smoothies. Do you really want to eat like that for the rest of your life? I know I don't!
    Eating healthy is more about finding a balance between the foods that nourish your body, while also enjoying those fun foods in moderation to keep you happy.
    With my recipes, I teach people to find that balance. Eating low calorie, and high protein, without sacrificing flavor.
    But more importantly, I try to keep it as affordable as I can for my followers.
    I spent less than $50 on the ingredients in this video, and I'll be making 3 different recipes with them. Those 3 recipes will yield 18 delicious meals!

    Grocery lists that go with your meal plans would be cool or in the future maybe an app that lets you select recipes for the week then it generates a meal plan and grocery list? (Then you could check off what you already have at home)

    As a single mom who works full time and runs a small business going into its busy season, this kind of content provides so much value. I bulk prepare a couple of recipes at a time and freeze most of it so we always have a variety of nutritious meals that can be ready in minutes. Well worth the $5/mo.

    The frito bowl around here is called a Petro. They were introduced at the 1982 Worlds Fair. They started as a simple bag of fritos, and then chili was added. There are several Petros around. They also have the best Iced Tea ever!

    I found going to Mexican markets has really good deals on meat fresh from the butcher and vegetables. Also the spices are bigger for a good price. Everything else you could buy cheaper from Walmart or target.

    AS a small veggie farmer, colored peppers are more expensive because they take longer to ripen and then have more susceptibility for disease or pests the longer it stays in the field.

    Love your recipes! I know making food affordable is one of your objectives so I thought I'd share one way I make chicken broth more affordable. Obviously making your own with leftover bones and vegetable scraps would be the cheapest and most nutritious option but who has time for that? I use Better than Bouillon and water when a recipe asks for chicken or beef broth. Even with the price increase 32 oz of water with 3 tsp BTB costs about 50 cents as opposed to 1.50 for a box of broth. It's not much but it adds up and BTB is so convenient. Just my 2 cents. Keep up the great work.

    I've gotten into buying whole chickens when on sale and then cooking them in the crock pot or instant pot. shred meat- easy to use in recipes. and pound for pound whole chickens are cheaper most of the time.

    This grad student & registered nurse thanks you from the bottom of my heart for this. I LOVE the crockpot meals!     Very helpful! I feed a house of 7 and every recipe (I usually double and feed the family and use leftovers for meal prep for me) has been a hit! I am literally boiling the pasta for the Crockpot Tuscan Chicken right now! The $5 a month for Patreon is well beyond worth it!

    I have made several of your crockpot meals and the turtle pie. I will be looking into patreon as that's new to me. I do agree with another commenter about maybe having an app that would help generate a weekly eating plan, meals and snacks along with a grocery list. I would subscribe to that. If you had a cook book that would be a best seller!

    The only thing I would suggest is to use better than bouillon which is a past and more bang for your buck and very tasty and in low sodium as well

      Low in sodium? Depends on ehat what your limit is. My home has heart failure patients, we are 1500mgs sodium per day.

    Are these meals good for diabetics? I am trying to control it with just diet if possible.

      All of my meals follow the American Diabetes Association’s recommendation for carbohydrates per meal 45-60g. And they are all high protein, which helps with rises in glucose 👍

    My wife is a picky eater and doesn’t always want rice as part of the meals. What do you recommend I try to swap out the rice with but keep everything relatively the same nutritionally? I was thinking lentils but I’m not 100% sure…

      It really just depends on what she likes. You could try quinoa or a bed of veggies. Some rice meals can usually be turned into a salad just by swapping out the rice for lettuce. How about diced potatoes?
