I've tried white and red cabbage. Even stuffed the red cabbage with applesauce and cinnamon. But I never can get it tender enough
The Dutch eat cabbage indirectly, they feed it to the pigs and eat those. This way the cabbage has a double purpose, which is more climate friendly, is healthier and tastes better. A clear win-win situation. Please take your rabiat ideas to the vegan cooking channels and stop torturing yourself watching pitmasters cooking and enjoying real ancesteral food.
Absolutely. Using offset heat like this isn't imparting any smoke or strong sear. Maybe use a mesh rack over a baking sheet to allow airflow around the roast.

@@SuWoopSparrow only thing around here that I am aware of unless they call it something different is pork butt or pork shoulder but that always has the shoulder blade in it so no good for that recipe and our local butchers are supermarket stores, but it is what it is right I’m sure there’s other things that people have a hard time getting but easy around here so no complaints

If you boil Apple juice it turns into that applespread (appelstroop) looks a bit like maple syrup but a bit thicker. Seriously just boil a 100% Apple version of applejuse untill 90% of the water is gone.

That is pork collar and not neck. Neck is totally different and i dont think anyone in western countries use it it even find it in supermarkets. In thailand pork collar and neck is very common to eat. Pork neck is rlly thin like skirt steak and has crazy marbling and hardly any red colored meat unlike pork shoulder and neck. Its almost 89% fat and looks very similar to wagyu. Its eaten alot in thailand.

If you can't find apple spread, try regular, chunky apple jam instead. Might do a similar job.

pork neck steak is great too - medium or cooked until its pull apart tender are both good. Try it on the grill.
