I love these cornmeal Pancakes, ...my Grandmother made these, and sometimes added homemade creamed corn , she called them " Johnny cakes", and actually she would put these in a bag for me when I went out horseback riding. I usually gone all day, I took fruit and Johnny cakes and a sandwich and of course something to drink ( and water for my horse and all that ,,lol,) but these are a wonderful kind of travel food .... they travel well and I ate them all the time growing up. I like adding cheeses to my eggs as well, and the Boursin cheese is delicious in scrambled eggs. I use King Arthur Flour, the Bread Flour ( makes a big difference, in cookies and breads) and I also use the Organic unbleached Flour one as well. Really liked these Recipes, Miss Amber...and the humour, as always! 😉🙂😁💗🙏🏻

Hi Amber I’m so glad I found your channel! I’m loving your videos and recipes! I tried your salsa chicken crock pot and beef and broccoli crock pot last week and both were terrific! I will definitely try out your recipe for cheesy broccoli cornbread and the corn cakes- I think my 7 year old twins would eat both. Only issue in our house is my kids are allergic to eggs. A work around I have used successfully is substituting a “flax egg” for the egg. 1 egg is equal to 1 flax egg (1 Tbsp ground flax meal plus 3Tbsp boiling hot water). I will update if it works with some of these recipes! Thank you so much and have a wonderful day.

Another option to try is to use one of those flat 3 in 1 size cheese graters (maybe even your "favorite kitchen appliance" cheese grater would work) and quickly grate your very cold or partially frozen butter. Now it's even easier to mix in with the dry ingredients.
When I need cold butter for anything I make, I cut up the butter and put it on a plate and put it in the Frig. That way you don't have to worry about your butter gettng warm. just take it out and use it when it is time
Grandma used 2 table knives to cut butter into her flour mixture. I’m a kitchen tool collector & user, but I’ve been known to use what’s handy/clean. 😂
The homemade Jiffy Mix equals the same as a regular box of Jiffy Mix? When you go to use it you would add the egg & milk like you would if using a Jiffy Mix Box?
It’s crazy your family don’t like corn in anything. My whole family loves corn cakes and corn casserole. Every holiday my kids request it and every holiday o host and it gets eaten by everyone.😊

We kept ours in the pantry. And when I mixed it, I just made the expiration by whichever one of the ingredients we added in, expired first. Hopefully that makes sense.
Kerrygold melts easier because it is 82% butterfat vs 80% for American butter. Kerrygold also looks and tastes richer because the cows are grass-fed. (No, I'm not affiliated with Kerrygold, although I am genetically part Irish 😂)

Oh yum! When making biscuits I grate the butter with a box grater, it makes it so easy to combine with the flour to get the right consistency.

What liquids do you add to the homemade Jiffy mix to turn it into a cornbread?
When you want to bake add 1 egg and 1/3 cup milk (and the oil if you didn't already add it). Bake 400 15-20 min.
Your should also use the broccoli stalk, peal and slice and chop its even very good used raw in salads. use everything you are paying for it>
