    If you know a Latin market or sometimes Asian market look for soy sauce to marinade and Uacatay or Black mint for the Green Sauce, you won't regret it, thanks to all of you for the diffusion of Peruvian cuisine.

      @@thebigmann81 the real recipe is really simple but wont be the real "pollo a la brasa" you will need a wood rotisserie chicken for that special smoky flavor.

    Nice job. When I buy Peruvian chicken it comes with 2 sauces the green one that you made and a yellow one. I love the yellow one, do you know how to make it?

    Here's a trick. If you put the olive oil in the food processor and then let the bowl rest upside on the post, the rest of the oil will drip out and not be left in the bowl to waste as I see here or, you can use the parsley or other solid foods to wipe down the bowl. Or better yet, use a spatula.

    Is there a way to replace sugar in this recipe with say stevia? Or something else. I’m cooking for my diabetic mother in law. Who can’t eat sugar.

    the chicken is pretty accurate but the sauce is kinda off traditionally (where I come from anyway, Ica peru) you use green bell peppers and a punch of sugar. also heres another peruvian recipe that's super simple. just make fries chop hotdogs and then add ketchup and mustard. I know it sounds American but it's peruvian

    Excelent!...but you should point out that the real peruvian green sauce takes aji,which is native hot pepper,and the jalapeño is a substitution......

    Did you wash the chicken before you began seasoning it?

      You wash the chiken to get rid of the slimy stuff and the funky smell that chiken has. Wether you wash the chiken or not if cooked properly it will get rid of any bacterias! My family and I have been washing our chicken my whole life and never got a food poisoning form it!!

      Then disinfect your sink afterwards with clorox....

      Carribbeans wash the chicken and then use lemon juice. Island tradition, no one ever died. Sink gets bleached. If you ever saw how dirty these chicken processing plants you'd wash the chicken. No splashing either, water at low flow or in a pan.

    The authentic way to make these dishes is to use the yellow amarillo pepper, very different taste and of course there is nothing like the limes in Peru!

      that aji sauce was invented in USA from the Peruvian restaurants they were trying to imitated aji huacatay

    Umm the way of it we don't put sugar for the chicken we use soy source it's what the Peruvians use . And if so the use a pitch of sugar not a lot like u did ,, its helpful if u did a bit of a research on how to make it .

    This is not peruvian chicken you most likely copied the recipe some where , we do not cook it like this
