Hi Stefany, with this batch you can make approximately 25 mooncakes. The measurements for the skin is 20 grams and for the filling it will be 30 grams. I used a mold of 50 grams. ^^

You can check if the dough is ready by using a spoon or chopstick to poke in the middle. If there's is no more liquid left the dough is ready . Overcooked dough might turn out dry. Hope this will be helpful 😃

Aww I'm sorry I didn't reserve the spot for you 😝 I told you it was easy to make. Haha, if you want you can change the filling - skin ration ^^ Would also make it easier to wrap. As long everything together is 50 Grams you're good. The custard filling i used is the same as the steamed buns one. It's really fun to make since you can play with the colors and have different fillings! Can't wait to see yours!! 😍

If they're not airtight I would recommend individually wrapping the Mooncakes with plastic wrap or put them in a zip lock before putting them in the container. The mooncakes can dry out and turn hard if it's not airtight. If consuming within a week you can store it in the fridge. If you want to keep the mooncakes longer than a week it's best to store the mooncakes in the freezer. When you want to eat them leave it out at room temperature for a few hours to soften. ☺️

@@hema254 Unfortunately, for this recipe there's no substitute for the glutinious rice flour. The glutinious rice flour is the main ingredient for the snow skin mooncakes. If you're interested in making mooncakes, I also have a baked mooncake version on my Channel which doesn't require glutinious rice flour 😊

hi, i've tried making these. but the texture of my dough is very sticky so its sticks to the plate when i tried to plate it. I've used corn starch but doesn't really work. may i know why?
After steaming the dough did you knead it until all the oil is in cooperated? The oil will make it less sticky. Another issue can be that when you refrigerate them, did you place them on parchment paper or directly on a plate? When ready to plate they should easily come off the parchment paper.

I tried refrigerated them the whole night so when i tried it, its sticky on the fingers. It’s my second time trying🥲 I don’t know where i did wrong
Next time try to place it on parchment paper while you refrigerate it. Hmmm, I haven't had any issues with the stickyness. It might be because of the hot days. Next time when you make it you can try to reduce the milk a little bit. 。◕‿◕。

May I know how do you store them? What kind of container do you use? I made these and stored in the fridge, but the snowskin hardened just after 2 days :(
You've to store them in an air tight container. (I use lock & lock containers). If not sealed properly they will dry out and turn out hard. You can also wrap them individually in plastic wrap before storing them. They'll be a little bit hard when you refrigerate them, but when you want to consume them let the Mooncake come to room temperate first (still sealed). They will soften and be stretchy again. ☺️

When you store the snow skin mooncake in the fridge, store it in an air tight container so the skin/crust won't dry out. They stay good in the fridge for approx 1 week or up to 3 months in the freezer. When ready to consumer take it out of the fridge/freezer and let it come to room temperature. The skin/crust will be soft and chewy again and not hard ✿◕ ‿ ◕✿
Yes you've to store it in the refrigerator. It'll stay good for about a week. If you want the snowskin mooncake to last longer you can store it in the freezer as well. It'll last up to 3 months if stored in the freezer (◍•ᴗ•◍)
It's best to use food grade gloves and a non stick silicone mat when working with the dough. If you do use it and it's still sticky try adding a little bit off oil and knead it in. Hope this will help ☺️
No need to bake the snowskin mooncakes. Since we steam the mixture, it's basically cooked. All you have to do is refrigerate the mooncake after shaping it for it to firm up and be more yummy 😁

@@mamacheshii I'm sorry, I think there might be a misunderstanding. There are no eggs used to make the actual skin, (the wrapping). If you are referring to the custard I used as a filling for the moon cake. I had already prepared all the fillings used for this video since the main focus was for the "wrapping" / snow skin moon cake. It won't last long outside of the fridge. I would recommend refrigerating them. If not refrigerated depending on the weather it's best to consume them within 1- 2 days.

When you are dusting the mooncake and mold is the cornstarch cooked or raw?
The cornstarch I use is raw. You can also use glutinious rice flour for dusting. That one you do need to cook. ^^

The glutinous rice you did not fry it first right, is straight from the packet?
To make the snow skin Mooncake skin I didn't fry it. If you want to use it as dusting for the Mooncake instead of cornstarch, you do have to fry it.

Yes i can use blended rice. Make sure you blend it really fine or else it will be grainy.

Maybe the snowskin with Gao Fen, shortening and cold water is different texture. Have you tried before?

What is wheat strach? Any substitute for that if its not availble?
Wheat starch is available at most Asian grocery stores. If you can't find wheat starch you can replace it with the same amount of cornstarch ^^

You don't need to bake the Mooncakes anymore after stamping. They're ready to eat after chilling in the fridge for 1 - 2 hours.

May I know how do you store them? What kind of container do you use? I made these and stored in the fridge, but the snowskin hardened just after 2 days :(
You've to store them in an air tight container. (I use lock & lock containers). If not sealed properly they will dry out and turn out hard. You can also wrap them individually in plastic wrap before storing them. They'll be a little bit hard when you refrigerate them, but when you want to consume them let the Mooncake come to room temperate first (still sealed). They will soften and be stretchy again. ☺️
@@PYsKitchen Thanks for the info, wish I knew that earlier 😞 The mooncakes were really nice and soft when consumed within the first two days but now they’re just hard and dry. Any idea on how I can save them? 😭
@@rebeccang4140 I'm so sorry to hear that 😟 unfortunately there is nothing we can do now. Are they still hard if you leave them out and let it come to room temperature?

Is the crust hard when keeping in the fridge and how long does the mooncake last?
When you store the snow skin mooncake in the fridge, store it in an air tight container so the skin/crust won't dry out. They stay good in the fridge for approx 1 week or up to 3 months in the freezer. When ready to consumer take it out of the fridge/freezer and let it come to room temperature. The skin/crust will be soft and chewy again and not hard ✿◕ ‿ ◕✿

Yes you've to store it in the refrigerator. It'll stay good for about a week. If you want the snowskin mooncake to last longer you can store it in the freezer as well. It'll last up to 3 months if stored in the freezer (◍•ᴗ•◍)
@@PYsKitchen my dough is too sticky to wrap the filling ( ・ั﹏・ั) Insufficient steaming time or excess time or something else?
It's best to use food grade gloves and a non stick silicone mat when working with the dough. If you do use it and it's still sticky try adding a little bit off oil and knead it in. Hope this will help ☺️

Yes the texture is similar to mochi. Just more soft 😊

You can substitute the wheat starch with cornstarch ^^

No need to bake the snowskin mooncakes. Since we steam the mixture, it's basically cooked. All you have to do is refrigerate the mooncake after shaping it for it to firm up and be more yummy 😁

@@mamacheshii I'm sorry, I think there might be a misunderstanding. There are no eggs used to make the actual skin, (the wrapping).
If you are referring to the custard I used as a filling for the moon cake. I had already prepared all the fillings used for this video since the main focus was for the "wrapping" / snow skin moon cake.

Shelf life of this without refrigerating ??
It won't last long outside of the fridge. I would recommend refrigerating them. If not refrigerated depending on the weather it's best to consume them within 1- 2 days.
