  • Southern Style Creamed Corn
    Step 1 - Shuck the corn removing the outer husk, silks, and the end stalk if still attached.
    Step 2 - Wash the corn and remove any remaining silks.
    Step 3 - Using a corn scraper/creamer, run each cobb down to remove corn, complete a second pass to completely milk the corn. Continue until all cobbs have been cleaned.
    Step 4 - Place corn into a large microwave safe bowl, leaving about 1-2 inches of head space. Microwave on high for three 6-minute cycles for a total of 18-20 minutes. Pause between each cycle and stir the corn well. Your mixture should be thick and no longer loose when completed. (do not exceed 20 minutes).
    Step 5 - After final cooking, remove from the microwave and add 2-3 cups of ice to cool the mixture and thin the consistency back out. Allow to cool slightly.
    Step 6 - Using quart sized freezer safe bags, label with the date and contents. Add about 2 - 2 ½ cups of corn into each bag. Remove the air, seal the bags, and lay flat to continue cooling. Once the corn has completely cooled, lay flat, and place in the freezer for 10-12 months.

    Thank you. Btw~ that corn silk is soooo amazing for UTI’s you can dry it (I store in a canning jar and vacuum seal) for teas or tincture.

    I had 4 children who are all adults now, but you can each one what their favorite childhood meal was and they will all say, fried chicken, creamed corn, acre peas and homemade biscuits. I’m going to Farmer Browns in Valdosta today to try and find some plums so I can make plum jelly.

    You could cut the end off stick it the microwave for 35 seconds and do it that way. Works fr one or two. Wear gloves when getting it out of the microwave. Much love from Scotland. Rab x

    Where can you buy milky corn? Only in GA?

    Use an electric knife and an angel food pan to stabilize the cob (you leave the stalk on when shucking). The kernels & milk will get caught in the pan. Much easier & no expense for extra equipment.
