      Brain's have got progressively worse over the years, to the point that I no longer buy them.
      Unfortunately, that means I haven't had them for ages, as nobody round here makes them.

    These look amazing, my old mum made these using heart and liver. really nice. Just a quick word, we are loving the chicken with the slits in crossways, I have made it twice now since you showed it, second time I didn't have any white wine vinegar so I used some regular red wine and it was really lovely so another new meal the family love thanks once again my lovely couple Maggie xxxx

    Definitely trying this. I wouldn't call it a totally British meatball because offal wrapped in caul is a dish made all over Europe. But the sage and onion definitely makes this recipe ours.

    A good heart these days is hard to find.........(It's a song/song title if you are old enough!). I love liver and kidney's. They are super healthy foods too brimming with natural vitamins. As usual you cooking looks amazing, nearly as good as a bloke I watch on UA-cam who cooks in a very similar kitchen.....

    That looks perfect do do in a slow cooker. I've no clue where to get caul fat nowadays, heart will be going in there when I make them though.

    Wow those look fantastic mand iv never made my own just had the mr brains ones which I love but I used to get savoury ducks from the butchers which I think are a similar thing maybe abit more spiced ? Thank you for this recipe I will be trying it can you use pork mince instead of chop ? Amanda xx

    Never seen them made before, very interesting.
    Great to see cheaper cuts being used Amanda.
    We are all a bit Wagu happy for my liking!
    It has it's place but cheaper cuts have stood the test of time.

    Grew up with these ingredients too, along with rabbit neck or crag. Usually lambs liver and pigs kidney and blood pudding. Tasty.

    Manda, I’m afraid that this is one recipe that I won’t be having a go at repeating. I simply can’t bide kidney’s at all. I once took my parents out for the day and when they were ready to eat we decided to try a new place for us which was a road side farmhouse. On the board outside they had listed various pies including a steak pie, which I fancied so we placed our order, steak for me mum asked for chicken pie and dad decided on gammon and eggs. As soon as the plates hit the table I could smell the kidney in the steam coming off the plates and I spoke to the waitress and said that I had asked for steak pie not steak and kidney and she said that it was just steak so I said fetch the cook, which was the farmers wife, who swore blind that there was no kidney. In reply I lifted the top of the pie off and stuck my fork into the thickest part of the pie and pulled out two pieces of kidney and said eat that and tell me there’s no kidney in it. She flushed them said that was the last serving of the pie left and nobody else had said anything about kidney. I stood up and walked to the serving hatch and quickly scanned the kitchen and right infront of me was a printed box that said Steak and Kidney. It wasn’t even as advertised homemade pie but commercially made S&K pie so I turned to parents and said we are leaving for all that they had been demolishing their meals and the silly woman said “ you have to pay for your meals “ to which I retorted No way, do you want to see what you’re local council have to say. And we walked out past her and her only response was to say You are banned, never come back here!By this point I looked back at her and just said “Really?” and walked out and got in the car and drove off and never heard anything else about it. About 4 months later we passed the same place and there were no signs or menu’s outside except for an estate agents for sale sign.

    I’m so sorry Amanda love but I shall not be making this one. All I can think of is the day when I walked into my nannas house and asked her what that horrible smell was and she very causally told me that it was just my grandas heart and liver cooking in the oven. They never rowed or anything that I knew of but I honestly thought that she had killed him. I was horrified 😂😂😂

    My brother does most of the cooking and wanted some ideas for old fashioned British food I suggested shop bought fagot, toad in the hole, and liver and crispy bacon with onions so far he's not done either. If it was just me at home or love to try this.

    Not my cup of tea. Have you heard of Oven Pie. My Mam was from New Castle and she would make it. Stewing beef, with a few Veg., light gravy (oxo cube) covered on top with a pie crust. Help me make it, if you can...thanks, from Canada

    Not a fan of organ meats, myself, but interesting to see an old recipe.
