    This chickpea/jackfruit salad stuff is SOOOOOOO good! i made it - tweaked it a bit and put it into pasta instead of a sandwich (cause my kids arent big fans of sandwiches) and they LOVED it!!! Thanks for this!

    Rinsing and squishing the jackfruit seems like a much better way to separate the chunks! I may be employing that trick in the future =) Ever since I started watching MommyTang, I've seen that kind of curry everywhere! Your food day looked epic =)

    for my "tuna" salad all I do is mash up a can of chickpeas, 1/2 an avocado, put a lil mustard in there, some dill, and chopped pickles (or relish) then slap it on some toast and put some tomato &lettuce slices on it. it's so yummy!!

      That sounds tasty but it doesn't look like it would taste of the sea. I've tried soaking chickpeas in brine and adding kelp and nori to the seasoning but these still don't really make it mock tuna. I can't get hold of jack fruit. Perhaps artichoke might work, it can flake like tuna but might be too soft from a can. Dunno.

      I recently made the crab cake recipe from hot for food with artichoke and old bay seasoning (not available in my country so bought 18 jars of spices to make it) and it was delicious and tasted nice and fishy.
      Maybe try that recipe and you can figure out a way to make a fishy salad with it :-)

    So happy the jackfruit worked out for you! I do a similar thing with just roughly mashed chickpeas allll the time. It's really good with relish mixed in! And celery.

    I am so glad you're on the jackfruit bandwagon!!! LOL! I love your channel, so I got sad when you said you didn't like because I use a lot of your recipes. It took me two times to make jackfruit for me to be sold. But this chicken salad recipe looks simply divine! I absolute love your channel!!

    I combined this recipe with the tuna sliders one to get a tuna salad and it was incredible! I've been vegetarian for 8 years and have always missed tuna salad sandwiches and now I don't have to :3 thanks for the wonderful videos, I'd definitely recommend giving it a try.

      fresh ripe jackfruit is not the right kind for this recipe... use unripe. But enjoy that fresh stuff! yum!

    Rehydrated and shredded soy curls Works wonderfully for chicken salad and chicken soup. I rehydrate either in no chicken stock stock or Asian mushroom broth powder and water because it is so Savory along with poultry seasoning and The Usual Suspects.

      watermelon slasher .... try marinating it in some garlic oil if you like it's really good and then you could add vegan mayonnaise. I'm not vegan so I buy regular mayonnaise however I just bought avocado mayonnaise so I'm going to try that for a while. It's a slow process for me because I love dairy however, I know I have to get away from it because it's giving me problems!

      I love that idea of marinating it in garlic oil. garlic is super duper yummy. AVOCADO MAYO???? I must know of this!!! their are so many little tricks to do like dijon mustard and agave syrup make honey mustard and coconut sugar with syrup make a caramel dressing. goodness.

    I made Coconut milk ice cream all summer two years ago. There were two recipes I was going to make, but didn't get around to it.....one was with creamed corn, and the other was with a powdered mix used to put in avocados for guacamole. But, my ice cream maker broke, and I can't buy another one at the moment. :(. However, I LOVE SO DELICIOUS ice cream, so because I DO have vanilla and chocolate ice cream in my freezer, I might try the creamed corn, and guacamole mix ice creams.

    I loosely follow online recipes and I can never taste the jackfruit when I make pulled pork. I'll coat it in seasoning and massage that in, then I might let that sit for awhile. Then I stir them around in a hot skillet. Next I'll add in water down barbecue sauce that has some other stuff added in and let it simmer. Lastly I bake it at about 400 for about 25 min, then coat it with some more bbq and hot sauce, add some coleslaw and enjoy.

    yesterday was a stressful day so I binged like crazy but luckily most of it was healthy binge-ing if you know what I mean LOL. I cooked all day so I had tons of fresh homemade seitan turkey Style and homemade black bean kale and brown rice patties and vegan macaroni salad with lemon and olive oil dressing and tons of fruit and bread with hummus

    Find the appearance of jackfruit revoltingly deep sea animal-like--and I have a strong, trained cook's stomach.     jackfruit makes me gag and i was going to give up even considering it until i saw this... now i have to find a can of it to try. (can of salted or unsalted?) THANKS! \o/
    for breakfast/lunch i picked some chickweed, lambs quarters and celery out of my overgrown garden and made a giant salad with that, cucumber, tomato, pickled onion (chopped a ton of onions into a big jar and covered with ume vinegar and then left it out to ferment) and some veganaise (like a ranch dressing altogether). snacked on a banana with pecans, had a bowl of frozen mango, pineapple, strawberries, cherries and banana (yeah, i have it backwards and should start the day with fruit but i despise sweet things in the morning).

    I bought a prepared jackfruit carnitas from Upton company because I've never seen canned jackfruit. Is it hard to find?

      Most Asian stores will have it on the shelf where they have tinned lychees, sweet jackfruit, pineapple, etc. Be sure to buy the "young" green one, not the "mature" yellow kind; the latter is ripe and sweet and won't work for savory recipes.

      Yes, but you'll want to replace it with extra flavouring ingredients. You can try crumbling in some veggie bouillon or add extra herbs/spices. Have fun with it!

      I bought some jackfruit in a box. "edward and Son's" (they were out of the cans) here at Sprouts, opened up the package and it was brown, not sure if it is supposed to look like that as the last time I Had Jackfruit, I was living in Spain... The package doesn't expire until May. I called customer support, sadly the lines are not open yet lol. point is, what is the brand you get? I will see if I can get it on Amazon.com

      textured vegetable protein in the shape of meatballs. Years ago, TVP was sold in chunks that had the texture of stewing steak but, nowadays I think they have a different extruding technique and they are now produced really weird, full of bubbles like the texture of those dreadful "Golden Nuggets" breakfast cereal from the seventies/eighties.

      The ones I used are like the ones that tamcon72 linked. They ARE weird as JE Hoyes said but they're decent in this curry. It's not my first dense protein choice though. Rather have beans ;-)

      +Mary's Test Kitchen | Vegan Cooking Fair enough. I currently only use them for potted "beef" and "liver" patés. I don't know why they've changed the texture. P'raps it's cheaper to pump them full of bubbles than to extrude them into clumped strands.

    Eating vegan at home is no probs. But, these past couple of weekends I've been eating out. There is nothing to eat for vegans in the Welsh part of UK I went to. I ended up frightening one pub when I asked them to swap out the haloumi in a panini for mushroom. Then it came with coleslaw and dressed salad with no guarantee of dairylessness. And, today, I thought I'd be safe with baked potato and beans, but the spud had a dollop of butter shoved in it. I am going to have to pack my own in future.
    It's like going back in time, when it was impossible to get anything vegetarian on a menu. Very disheartening.

      Nah. In the vegan culinary world, it's common to name "vegan such and such" and in this case "jackfruit chicken" because that's how people search for these types of recipes. Vegan chicken, vegan beef, etc. I could use other common terms like chick'n or chick'un but this makes recipes less easy to find through search.

      kloy reno .... You don't have to be vegan to try Jackfruit or even vegetarian! I'm neither yet I'm trying to eat more healthy, so I had some Jackfruit recently and I love it, especially if you marinate it in garlic oil and then mix it with mayonnaise
