Too late now but plastic with paper is good for about 12 months in the freezer.
Oxtails are good in a pressure cooker or slow cooker. Either way be sure to use some (decent) red wine as part of your liquids.
Brisket -- google gas grill indirect heat. I only cook on half my bbq grill. And pick up some mesquite chips at Home Depot!
What time should I be there?? 😉

Don't worry as long as they did a good job with wrapping the meat, that paper works amazing. I had beef for well over 2 years and it was great no freezer burn at all.

I've had the opposite result I won't use a butcher that hasn't invested in a vacuum sealer. Freezer paper is cheaper and faster for the butcher.

The vacuum sealed is nice because you're able to see the meat as well as the weight etc. Butcher paper is fine though as it keeps well frozen as well... you can't go back to store bought meat once you've had it fresh!

Yo big super that flatiron steak might make you forget about those new yorks. I used to be a meat cutter and those flat irons are a real treat. And being originally from CA tri tip is something I do often flanks are very tasty and take up marinade very good. Cheers 🍻 from san tan valley

@@BigSuperFam keep it simple big super. Flat irons, use your favorite marinade. Tri tip i use olive oilLawrys garlic salt and corse black pepper on a gas grill id do 300°-350° for about 35-45 mins on your top rack. After turn up your grill and sear for another 5 mins a side, let it rest for a minimum of 15 mins then slice. The flank steak I chop up some fresh garlic season with a little olive oil, garlic salt, and pepper, squeeze about 2-3 fresh limes throw it in a zip lock bag let it marinade for about a hour then get your grill smoking hot and sear it for about 3-4 mins each side. Let it rest for about 5-10 mins slice and either make tacos or serve with whatever sides. Flank is also good with Asian marinades its a great tasting steak have fun with it
