Italian Dressing Recipe | Vinaigrette Made From Extra Virgin Olive Oil & Red Wine Vinegar

  • This Italian dressing puts Olive Garden to shame! One of the best ways to incorporate more vegetables into your diet is with salads. However, most people use bottled dressing from the store which is actually very unhealthy due to the cheap, processed oils and preservatives found even in the "good" brands. Join Eric from Simply Elegant Home Cooking as he demonstrates a delicious recipe for homemade Italian salad dressing.
    The key to this dish is in the quality of the ingredients! It is important to buy a high quality extra virgin olive oil and red wine vinegar that are both imported from Italy. In addition to the oil and vinegar, an assortment of dried Italian herbs and cheese will give your dressing an authentic zesty Italian flavor that you will never replicate in a store bought dressing!
    Ingredients:
    -50ml Italian Red Wine Vinegar
    -125ml Italian Extra Virgin Olive Oil
    -1 small shallot
    -1 clove garlic
    -1/2 teaspoon crushed red pepper flakes
    -1/2 teaspoon dried basil
    -1/2 teaspoon dried oregano
    -1 teaspoon dijon mustard
    -2 tablespoons grated Parmigiano-Reggiano cheese
    -salt and freshly cracked black pepper, to taste (but be generous!)

    I started making something like this on my FODMAP diet. It's out of this world!!! Even with cheaper ingredients, it's way above a name brand bottled dressing.

      Oh yes, even using a cheaper olive oil and vinegar will still yield much better results than store bought!

    I have kept it in the fridge for two months as I make big a batch! The red wine vinegar acts as a preservative big time!! 👌 👍🏽

    I really like your approach but, just asking…the salt and the salt on the cheese wouldn’t make it a bit to salty??

      It keeps for a week, but tbh I’ve never struggled to use it up in a day or two!

      I’d probably use within a week. I doubt it would hurt anything to go a little longer but it’s so quick to make.

    I think all the ingredients in the recipe are great except for the parmesan. I'm not sure it's needed. It's a pretty expensive ingredient to be overwhelmed by some of the other ingredients in the dressing

      @@SimplyElegantHomeCooking No doubt. My point is most average people buy Kraft Parmesan Cheese or even store brand parm at $3.59 instead of Reggiano for $25+/lb. It's just a very expensive item that most people will never buy and then put in a homemade salad dressing. That was my point.

    Olive Garden makes the worst Italian entrees I've ever tasted! Go to a real quality Italian restaurant or learn how to make it yourself.

      Thanks! I like using the Parmigiano Reggiano in the dressing and also shaved with a vegetables peeler into the salad.
