For those having problems selecting multiple layers to cut out just CTRL click the first layer and then CRTL+SHIFT click the rest, then continue! :)

How do you add another cutout once you've made one or more cutouts already? I can see how you select one or more layers of text to create one or multiple cutouts within the same rectangle at the same time, but once they have been created, if I try to add another text selection later, the option to do Layer>Layer Mask>Hide Selection is greyed out.
