  • Ingredients:
    2 lbs (907g) boneless chicken breasts
    2 cups (14 oz) marinara sauce
    2 oz (57g) Parmesan cheese, freshly shredded
    4 oz (110g) mozzarella cheese
    2 eggs
    All-purpose flour
    Italian bread crumbs
    Vegetable oil
    Salt, black pepper, dried oregano, dried basil
    Preparations:
    1-Slice the chicken into thin cutlets.
    2-Place the chicken slices between two sheets of parchment paper and pound with a mallet to tenderize.
    Directions:
    1-In a small bowl, whisk together the eggs, salt, black pepper, and dried oregano.
    2-Dredge the chicken slices in flour, then dip them in the egg mixture, and finally coat them with Italian bread crumbs.
    3-Fry the breaded chicken in vegetable oil until golden brown.
    4-Spread marinara sauce in a baking dish.
    5-Lay the fried chicken breasts over the marinara sauce.
    6-Sprinkle with dried basil.
    7-Top with a layer of mozzarella and Parmesan cheese.
    8-Preheat oven to 350ºF (177ºC).
    8-Bake the chicken Parmesan for 20 minutes.
