My Granny from Belize used to cut up some onions and steam it in vinegar then throw that over her mountain of fried fish every Saturday. Man, I miss her. I have eaten fish cooked this way. It's just okay to me. First. I don't like the taste from the garlic infused oil. Second, I don't like how soon the fish looses it's texture after it comes out of the pan. I do like to coat my fried fish with finely ground corn meal and various seasonings. Still, I do take my time to fry the fish in the same manner that she does. In the end, I did learn why fish fried in this manner didn't remain firm. Thank you lovely lady for your video.

This is exactly how I make my krisp fried fish. Perfect for escovish. Powdered seasoning takes away the natural flavour that the fish has.
