Being a foodie and a home chef I like to use higher quality ingredients, however I often make a new dish with cheaper stuff first so I can get the general balance worked out before investing in it. It's also still going to taste epic, it just won't be as complex, which is fine.
And I love the fact that the experts here are not pretentious at all. They truly want to share their knowledge and help others find their way in their field.

European brought sausage to USA and capitalised it in early 20th century, while in Europe sausage roots waaaay deeper for hundreds of years so it is very accessible locally.

I really love these Epicurious comparison videos. There's a little bit of suspense about which is more expensive, but in the end you get a good education about what to look for and watch out for in a food.
For the veggie sausages, there's a few things you can look for. Things that just have that "bean" or "tofu" flavour are usually just mainly soy or pea proteins, then seasoned with aromatics and onion/garlic. It might have yeast extract in there for the beefiness, but you can still taste the beans. Those are usually cheaper. The more expensive ones have a higher portion of their protein made up by mushrooms and ground nuts. Like with normal sausages, the shortcuts with using liquid smoke applies.
Great episode but I was LMAO at the veggie sausage description. Y'all threw him off with the turkey bacon as well. He looked so relieved that experience was over. LOL!
I love these videos but afterwards I'm left with the sad realization that I don't have a place to buy nicer quality versions of the products on display here.

Hänschen Klein Yeah? So? I mean... you write that... but vegans probably are just as grossed out/unnerved when you talk about meat. You aren’t a cryptid because you’re an omnivore. You want chicken wings to taste like chicken. You want butter for your toast to taste like sweet cream & salt. A lot of people in the USA don’t seem to eat blood sausage. So a lot of people get the heebie jeebies about any sort of “foreign” food. Liverwurst, octopus, eel, cow tongue. I wouldn’t be surprised if that made you gag right now but with proper seasoning & prep, those FOODS are ALL delicious. Lots of things are gonna be gross to you if your diet mainly consists of mcdonalds hamburgers & kraft mac n cheese. I just tried blood sausage for the first time at 33. Had the “cheap” type w/ rice & I loved it. If you become more open minded with what you put in your stomach, you can learn things & have fun while doing it. You may not like everything you try but, that makes it an adventure & a story to tell later. Unless a very microscopic selection of humans make and/eat the food in question, odds are that it’s pretty darn tasty at best & it should never kill you at about the worst. (And before you rebuke, even chicken nuggets can kill you.)

@@cameronyeager7482 OPs Name is german. I guess he is german, austrian or swiss. Germany has a huge "sausage Tradition" we eat a ton of Bloodsausage, Liverwurst and other stuff that could disgust foreigners. But our Bloodsausage has only small bloody aftertase, atleast the ones I ate.
I really loved his reactions to the veggie sausage. As someone who isn't vegan, but who likes to experiment with mock meats, those texture and flavor descriptions were really useful, honestly.

these videos are amazing but i wish they would confirm/correct him in the edit whether he's right with the milk powder or the spanish origin or whatever. things like that if he found correct should be said, or the right answer should be put into the edit.

I really love these Epicurious comparison videos. There's a little bit of suspense about which is more expensive, but in the end you get a good education about what to look for and watch out for in a food.

For the veggie sausages, there's a few things you can look for. Things that just have that "bean" or "tofu" flavour are usually just mainly soy or pea proteins, then seasoned with aromatics and onion/garlic. It might have yeast extract in there for the beefiness, but you can still taste the beans. Those are usually cheaper. The more expensive ones have a higher portion of their protein made up by mushrooms and ground nuts.
Like with normal sausages, the shortcuts with using liquid smoke applies.
