By far an underrated video. You're the only video on UA-cam that steam canned with the instant pot. I can't find anyone that has done an instructional video.

Many instruction booklets do not make it clear that the electric pressure cooker is essentially using steam canning techniques for high-acid food canning. For those of us familiar with waterbath or pressure canning, the instructions don’t make sense. You made process very clear. I’m now looking forward to trying my favorite pickle and chutney recipes with this method. Many thanks!

@@LonnieWard because it is safe to can in it. You only need up to a certain pressure and temp, the Instant Pot can do it.

Thank you for helping me as a newbie understand that this is NOT A PRESSURE CANNER. This was extremely unclear to me when first researching canning. I have since purchased a certified pressure canner for low acid foods. Love this easy method for steam canning high acid foods!!
The Instant-Pot company says it is able to be used as a pressure canner, and is negotiating with the relevant authorities for recognition and testing.
They designed it to have that ability, after all.
Meanwhile, the NCHFP made a series of statements without running any tests. Seems irresponsible, and harmful to business competition, to me.

@@she_sings_delightful_things The instant pot MAX can be used as a canner. It reaches 240 degrees and a little above at sea level and maintains it well. I have all three instant pots but the MAX does it all.

Kudos to you for letting your beautiful gray hair grow out! You are obviously way too young but mine started to grow gray hairs when I was 28 and unfortunately I started coloring it and once you start it's hard to stop. But when it started growing out this covid season I have let it go and I will continue to let it grow out. Now I have about 1/3 gray hair and 2/3 blonde hair but it's not bad so I'm sticking with it.

Thank you for this and your other very thorough tutorials on your blog about canning with the instant pot! I was able to can 3 dozen jars of hot pepper jelly (my very first time canning!) this holiday season for gifts and it was so exciting to hear those lids popping when they came out of the IP.

The following is for those who are not knowledgeable about safe canning:
Electric pressure cookers or canners have NOT been approved for safe canning of low acid foods (veggies, meats, broths & soups). You can *only* use stove top pressure canners for low acid foods, as they have a weighted gauge that maintains the correct pressure throughout the processing times.
Electric pressure canners, even if they have a canning button, have not been approved.
I just made some medlar jam and can't find my water bath canner and the kids got me an instapot for Christmas. I can't wait to try this out with the small batch jamming. Thanks so much . Love the channel. Watching and supporting . Big thumbs up from one creator to another :)Jen

Hi so I have a couple questions concerning your method of canning. By the USDA standards there are only type forms to canning which is water bath canning and pressuring canning. How did you come up with the method of steam canning in the pressure cooker? I also have the blue book to guide to preserving and the only methods they use in this book is water bath canning and pressure canning; it does not talk about any method of canning in a pressure cooker. My concern with this method is the risk of botulism or food spoilage; how can you be certain this method is safe when the USDA only recommends to use water bath canning or pressure canning?
Hi Rachel - Thank you for asking an important question.
This method of steam canning, also called "atmospheric canning," has been around for more than 80 years, but was only tested and approved in 2015 by USU and WU when they did extensive testing. There are certain conditions (use only high acid foods) and you must use the Seven Rules of Safe Steam Canning as described in the articles that USU and WU and as indicated in my article (linked in the video description and in this comment).
Atmospheric canning uses the same processing times as water bath canning and when times for altitude are used.
I, too, have the Ball Blue Book of Preserving and recommend using these tested recipes that are safe to use. You cannot use low acid foods or tomatoes with atmospheric canning. I tested the temperature of the inside of my cooker and recommend that you test yours as well, prior to any canning. Please read my attached article that will help you understand more about this type of canning. If you are still unsure, then use the water bath method of canning. Enjoy!

I'm not familiar with this type of pouch. You would need to analyze the material and what heat it can withstand before attempting to sterilize them in the Instant Pot.

Why can't you can low acid foods? Can you use the instapot for beans since they aren't considered high acid?
Jenna Bird V , you need to use a pressure canner for low acid foods, like beans, veggies, and meats. A pressure canner reaches a much higher temp, above the boiling point, to kill bacteria and prevent the deadly toxin of botulism in your canned foods. The Instant Pot is not a pressure canner and cannot be used to process low acid foods. You can use the method of steam canning demonstrated in my next video for high acid foods: fruits, jams, jellies, and pickles. 😊

Folks think that as long as it has sealed, it is fine, but that is not true. Botulism is deadly - you can't see it, smell it, or taste it. Over 90% of deaths from botulism are a result of improperly home canned foods. You can read more here. Enjoy!😊

Because that's the proper method, and she agrees with that. She's saying don't use the Instant Pot as a pressure cooker for canning.
@@danaprice8042 - canning of high acid foods is fine in the Instant Pot, when using water bath or atmospheric (steam) canning.
You cannot use the Instant Pot to can low acid foods that require pressure canning. It's common to confuse pressure cookers with pressure canners and I can't recommend canning green beans with a pressure cooker. 😊

I would say no. Meats are low acid foods and can't use this method of canning. Sorry!

Are you sure that 1/4 inch head space is the right amount of headspace? I had 1 of 5 jars that didn’t seal, and oozed out of the lid a little.
It depends on what food you are canning. Some require more or less headspace, so follow the recipe as directed from Ball or NCFHP or County Extension Agency. When food escapes the jar during processing, headspace and/or not screwing rings fingertip tight are usually the culprit.🙂

I recently purchased the instant pot ultra. I really enjoyed your steam Canning part one and two tutorials. Do you have something similar but using the instant pot ultra? I did this big variations in the process. For example I can’t set the pressure release valve to neutral on the Ultra. I was looking forward to doing some canning with my instant pot ultra so so any additional advice would be appreciated. Thank you. 🙂
Hi Tina! I just got an Ultra, so I understand your question. You can pop off the pressure regulator and instead of waiting for the float valve to come up, just look for a steady stream of steam coming from the hole where you removed the pressure regulator.🙂
What if you just raise the acid level of the food by adding Lemon or vinegar.
Pickled foods.
You can use this method with pickled foods that use water bath canning methods. Use only tested recipes from Ball, NCFHP -or- county extension agencies. Do not try to guess how much lemon juice to add to a recipe. 🙂
I wanted to can my home made red 🌶️ sauce is that ok in my instapot? I can do 2 ways just the red Chile before made into the sause or the complete sauce if it makes a difference. If it wouldn't I'd make the sauce .
You will need to use a tested recipe that has lemon juice -or- vinegar in it to have enough acidity for water bath canning or the method used here in this video (atmospheric canning).
It is important that you use *only* recipes with enough acid to safely water bath can. Use this recipe here, or submit your recipe to a county extension agency (USU, Colorado or Wisconsin) & they can tell you if there's enough acid. Tomatoes alone are not acidic enough to water bath can. 🙂

Will the instant Pot generate enough heat to kill the botulism spores? I have an instant pot and would love to can with it.
Yes, it will. Once it creates steam at your altitude, that is the temperature that will kill any spores for high acid canning. If you look at the article link in the video description, you'll note that I put a thermometer in my cooker to see what temperature it was inside. It is the combination of acidity, temp & time that will safely kill any botulism spores for high acid foods.
For low acid foods, you'll need a stove top pressure canner. 🙂

Hi Frieda.. Question.. I have the Ball book and want to make a Peach Habanero Jam and a Peach Habanero BBQ Sauce. The Ball book calls for a couple 3oz packages of Ball Liquid Pectin.. I only have powdered.. I'm guessing powdered is fine.. but have no idea of a conversion. I plan on making about 8 half pints of jam and about 4 pints of BBQ sauce. What would you suggest here???
I apologize for the late reply as I was out of town. Thank you for watching and asking a great question! Here is the conversion for liquid vs powdered:
"You use two tablespoons of powdered regular pectin for every packet of liquid pectin. The difference in usage is that instead of adding the pectin at the end of cooking like you do with liquid, you whisk the powdered pectin into the sugar before you combine it with the fruit."

The difference between water bathing and pressure canning is the temperature reached. You need to kill the Clostridium Botulinum bacteria for neutral to alkaline foods at around 240 degrees Fahrenheit. Does anyone know if the InstaPot can reach these temperatures?
It *can* reach those temps, but they can't maintain or regulate the temps because it does not have a pressure regulator. It can keep the temp within a range, but it can't maintain an accurate temp during the processing time. With pressure canning, time & temp are essential for safe canning of low acid foods.

My first few batches I left the steam valve closed in my instant pot. Can you please let me know if I need to steam them again or what happens when you leave the valve closed? I'm canning peaches at 8,700 elevation
You will need to reprocess your peaches or store them in your fridge or freezer. The steam valve needs to be open or removed during the entire processing time. Having the steam valve closed prematurely means that the peaches didn't process correctly at the right temperature.

After being at room temperature for 3-4 days, I would discard them. So sorry, but it's better to be safe when it comes to food preservation.

I have an aroma food steamer/rice cooker/slow cooker... Can I use it for canning?
I haven't tested rice cookers. Only the Instant Pot. I wouldn't use it for this type of canning. 🙂

One thing I was wondering is why you cannot can meats. I understand that there is standards but, what are those? I know several people who've used there instant pot to can meat and I don't feel comfortable eating it!
Meat, broths, soups & veggies are low acid foods and require a stove top pressure canner that gets to a high enough psi (pounds per square inch) to safely process the food and prevent any bacteria that causes botulism that can grow during improper canning.
Instant Pots are pressure cookers, not pressure canners and do not reach or have the ability to maintain a high enough psi to safely process low acid foods.
Even if a pressure cooker has a "canning" setting, it has not passed any testing from the USDA or NCFHP.
Botulism cannot be seen, tasted or smelled and can be fatal.
Water bath canning or atmosphere canning has been tested, approved and used for ONLY high acid foods (fruits, fruit butters, pickles or salsa that has lemon juice or vinegar added).
Please use only tested recipes from Ball canning, NCFHP or your state county extension agency.

Green beans are low acid and cannot be canned in the Instant Pot pressure cooker. They need to be canned using a pressure canner.🙂
I dont understand why you can't pressure can in the ip if your under 1000 feet because the site clearly states that it pressure cooks at 10-12 psi and you need to can at 10 psi below 1000 feet. As long as the jars are boiling when you take them out and they seal i don't see whats different
It's because of the design of the cooker. The pressure is not regulated as accurately as a pressure cooker is and it hasn't been tested to see if it can maintain the psi long enough for pressure canning.
Pressure canning is not just about the temperature.
Water bath canning is about maintaining the boiling temp for a certain period of time to safely process the food.
Pressure canning is an entirely different process.🙂

You can't use it for low acid food canning, which requires a pressure canner. The Instant Pot is a pressure cooker, not a pressure canner.

I'm sorry. You can't use this method for canning bone broth, as it is a low acid food. You will need to use a stove top pressure canner or freeze your bone broth.
You can only use this method of canning with high acid foods: fruits, jams, jellies, pickles or fruit butters.🙂
Has anyone used the Viva on pressure cooker setting for canning beans?
Unfortunately, you cannot use a pressure cooker to can beans or any other low acid foods. This includes meats, broths, soups & veggies.
You'll need a stove top pressure canner for these foods.
You can use your Instant Pot pressure cooker to can HIGH acid foods such as fruits, jams, jellies & pickles. Please see my article linked in the video description above for more information. 🙂

If you can remove the pressure valve, you can do a steam test as described in Part One of my canning series.
Use the processing time on your recipe, adjusted for your altitude, and make sure you have enough water to last you during the entire processing time. 🙂

Confused why does the instapot have a pressure canning button?
Instant Pot has one model that has a canning button: Max.
This setting is for pressure canning of low acid foods. To date, it has not passed the standards for pressure canning set by the FDA -or- NCFHP. No electric cooker is currently approved for pressure canning.🙂

No, you cannot. You will need to follow a tested recipe for salsa to ensure that it has enough acidity for safe preservation. Ball Blue book guide for canning or the NCFHP site have recipes you can use for water bath canning. 🙂

It's not about the presevatives; it is the acid levels that determine the type of canning used. Low acid = pressure canning. High acid = water bath canning. Since we are not sure which method was used to bottle the store bought salsa, it's best to freeze it, not try to bottle it ourselves or mix it into another recipe. 🙂

Can you can caramel w/ the instant pot?
No, you cannot can caramel or dairy products. However, you can use sweetened condensed milk and your pressure cooker to make Dulce de leche, a type of caramel that has a two year shelf life.

Any pressure cooker can be used for canning. Even the electric ones with trendy names.
Can I use 12 pint jars ?
You can fit 4 pint jars in a 6 quart IP. If you have an 8 quart, set the jars on the trivet to see how many you can put in. See this post:

hello, I have a quick question, I understand the recipes are tested, I have salsa recipes that have been passed down, how do I know if they are safe to jar? Or how do I know how much acid to add?
I wouldn't use a salsa recipe that has been passed down, unfortunately. Science and testing has come a long way and we know more now than our grandmothers ever did. My recommendation would be to contact your state Extension Agency and send them your family recipe. With their experience, they can tell you if there is enough acidity or to add lemon juice. Another factor is that the tomato varieties these days are not as acidic (more sweet), so you need to be careful which varieties to use for canning salsa.
Can you can apple sauce?
Yes, you can with this method, as applesauce is a high acid food. 🙂
Can I can fresh salsa?
Yes, as long as you follow a tested recipe that ensures it has enough acidity. Here's one to try. 🙂

Can you use an instant pot to can meat sauce?
No, you cannot. Meat is a low acid food that requires pressure to can properly. The Instant Pot can only be used for water bath (or steam canning as demonstrated in this video) of high acid foods.
Instant Pot will be introducing a *New* pressure cooker (Max) in May/June that has a higher psi and a canning button. It is not certain at this time what types of canning we will be able to do with this new feature.
Can I steam can a home made peanut butter?
No, you cannot. Keep homemade peanut butter in the fridge for 2 weeks or freezer for up to 6 months. 🙂

Because of the natural oils in peanut butter, it can go rancid very quickly. You'd have to make it fresh that day and sell it with the best by date of two weeks. If you have access to a FoodSaver vacuum sealer with a mason jar attachment, you could try that for a longer shelf life. 🙂

Only if it's a tested recipe from Ball, NCFHP, or your state extension agency. It must include lemon juice, citric acid or vinegar for water bath canning. You can find a recipe here. 🙂

How much water do you put in the instant pot, for steam canning?
It depends on the size of your cooker. You'll want to do a water test as described in the link that is under the video description. It gives more information. 🙂
Why can’t we pressure can veggies in this?
I read that pressure temp of the canner is 244*F in the manual and that would kill botchulism spores

Pressure canning veggies, meats and other low acid foods require not only a constant temp, but also constant pressure, that is regulated with a weight. All IP models do not maintain a constant pressure. The only IP that claims to do this is the Max model. Even then, this model has not been tested or approved for pressure canning of low acid foods by the FDA or NCFHP. 🙂
Thanks for answering, I’m trying to find a way not to get a burnt taste in a super sweet variety of corn. I’ve been canning for 43 years and know the temps but was hoping the instant pot would help with this. It appears not. The university of Florida said boiling for 6 hours kills the spoofs so I might try that. I’m freezing the superset homegrown corn right now though

I thought Instant pot was pressureized.
Instant Pot has non pressure settings as well. The method of atmospheric canning that I describe in both my IP canning videos/articles use *no pressure.*🙂
I am so disappointed I just ordered the 10 in one. Now I find out I can not can pinto beans or kidney beans. So disappointed
You can use a pressure cooker to can any type of beans.
U can't regulate the pressure with Instapot its fround upon by the USDA Incase you didn't know that
My video and process does NOT use any pressure and uses water bath canning times for HIGH acid foods only.
I am an experienced canner of over 30 years.
Pressure canning is for LOW acid foods only and needs a pressure canner, not a pressure COOKER. The IP is a pressure cooker, not a pressure canner. :-)
