- 锅包肉 Crispy Pork in Sweet & Sour Sauce, a very popular dish that was originally from Dong Bei of China. The meat is crispy and it's covered in sweat & sour sauce. Surely everyone in your family will love it!
Ingredients:
300g Pork loin
Potato starch 100g
White rice vinegar 70ml (not white vinegar)
Sugar 50g
Cooking wine 1 tbsp
Carrot
Spring onion
Coriander
Garlic & ginger
Vegetable/Canola oil
Steps:
1. Soak the potato starch in cold water and set aside for 20 minutes;
2. Meanwhile cut the pork into 3mm slices, if too thin the meat will be dry;
3. Cut the garlic, ginger, spring onion, carrot and coriander;
4. Marinate the pork with cooking wine and salt;
5. Remove the excessive water that is floating on top of the potato starch;
6. Mix well the pork with the wet potato starch, if too dry add water or oil little by little;
7. On medium heat, put the pork into the hot oil one piece at a time. Once floating and the outside is crispy, take them out of the oil. This will only take a few minutes;
8. Re-fry the meat for 10 seconds with medium to high heat. The meat will be dry if over-cooked;
9. For the sauce, on low heat, add ginger and garlic to the pan with a little oil, then add sugar and white rice vinegar, once thickened, add carrot, spring onion, then add coriander;
10. Quickly coat the crispy pork with the sauce;
11. Enjoy!
