Gretchen the home made almond paste recipe is a Godsend! Nobody around here stocks almond past except around the fall/winter holidays, so if you need it at any other time of year, too bad. The cookies themselves are such a delightful bit of nostalgia for me: In my home rustbelt suburb, every Sicilian-American bakery makes these, they are all identical, and were a sweet little treat for us sometimes after school. Now I have the secret veganized recipe, ha-ha! Thanks for posting : )
Gretchen I love these. They were created by Italian American, by a Neapolitan, to commemorate Italy with the flag colors. Not seen in the majority of Italy as they claim. They are like venetians really. I've been making them for years. I have made almond paste once like 16 years ago, store was out of almond paste. Used regular almond yikes what a job and it was crazy 😧. Didn't think of almond flour. Ty 😊

Can you substitute aquafaba from other beans, such as cannellini?
Yes!
I used pandan powder and beetroot, but my colors were not nearly as vibrant. What dyes did you use? Great recipe btw! They taste great!
