I agree that it seems not to be very time nor cost effective--but kudos to you for making your own. And the part I loved in this video was when you slipped the fork in the end of the strainer to stabilize it. Does everyone know about that trick??? Pro tip. If you microwave your lemons for 15-30 seconds and then roll them on a hard flat surface before you cut them, they'll juice really easily and you'll actually get the most from them.

By microwaving the lemons you also kill the nutrients, especially Vitamin C, which is extremely sensitive.

@@bottomfeeder1307 point taken. I might not have considered that. Many famous chefs & notorious people don’t own microwaves in their homes for health reasons ~ they don’t eat or serve nuked foods). But I was about to do this one. I go to a lot of trouble to keep things as clean as possible in my home (buy organic if possible, etc) and it’s taken years. Of course it would have to destroy nutrients. Thx 🙏🏽
What do you do with the water sieved out from the curd?
Maybe tell us to what temperature you heated the milk before adding the other ingredients. Pretty key piece of information.
I believe it’s 180 or 185 fahrenheit

Every single video like this I've watched lately has had a lie in it. Aside from politicians, these are the biggest liars I've ever seen on the net - chefs. Unbelievable.
The video edits all most of the process and it still is a 7 minute video. This would take almost an hour from prep to packaged. And it's not like 3 litters and milk and almost 2 sticks of butter would be cheap for a bit of cream cheese, at this point making it at home is both more expensive and more time consuming than just going to the supermarket and getting it.

Хороший рецепт, но я делаю из кефира и сметаны. 900гр кефира 400гр сметаны 20% 0.5 чайной ложки соли, смешать и на марлю и на друшлаг часов на 5. Затем на ночь в холодильник под гнет. Получается 480гр готового сыра, очень вкусный на бутерброды до кофе. Если взять 430 гр сметаны выход 530гр.

Не знаю разницу во вкусе, но по финансовым соображениям, с молоком и маслом подешевле выходит, примерно в два раза. Но конечно вкусы могут отличаться. Тогда экономическое сравнение теряет силу.

Divide recipe into a 3rd of a serving. I was thinking halfing it would be easier.
Add the lemon juice (or lime, or vinegar) when the milk starts to simmer. Don't let it come to a full boil or you will end up with a more grainy end product.
Yes, you can scale down. Use 2 tablespoons of lemon juice per liter of milk.

Lovely. The run off after the milk is curdled is whey and super healthy. My doggoes love it Packed full of protein...don't throw it away. Of course, they love the cream cheese part, too.
Do you just give them the whey to drink, or do you mix it in their food?

@@NubianP6 they lap up the whey on it’s own. I never throw away soured milk. I let it continue to curdle in the refrigerator. Then I pour it into a sieve over a bowl. They get the run off (whey) right away. I will leave the more solid part in the sieve over the bowl for a day or two. More whey will come into the bowl and that gets distributed between the two of them. Finally, almost no liquid is left and just the cheesy milk in the sieve and then that gets divvied up between them. I use it all as a nutritious snack.

No additives , NO preservaties , NO color added. JUST TOTALLY NATURAL , HOW IT SHOULD BE !!!!!!!!! ❤❤❤❤❤❤
If you buy cream cheese in certain parts of the world, it won't have those anyway as those additives are not allowed.
This isn't really the food to make those claims on. Most cream cheese brands have very basic and simple ingredients. The only extra ingredient they tend to have beyond the normal milk/cream, cheese culture, and salt is some kind of gum like xanthan or bean gum. That's just to keep the consistency stable. I'm all for cutting out unnecessary or potentially harmful ingredients, but in the foods that actually apply.
Same thought. Store bought cream cheese is pretty good to go when it comes to dyes and chemicals.@@jp8649

I buy A2 organic milk and want to make butter from that for this recipe. Oh my! My guests will love this! Its better for everyone because there are no artificial ingredients!

What difference des it make whether you use pasteurised milk or fresh, unpasteurised, unhomogenised milk.?
Oh, this cream cheese recipe seems simple and delicious! 😋🧀 I need to try adding sugar and butter for a creamier texture.
Another way to get a creamier texture, rather than adding butter, is to:
1. don't let the milk come to full boil, only simmer it during the curdling process.
2. add back some of the whey to the curds while you are blending it smooth, you only need little.

@@marinayoel696Думаю, что как раз для Израиля такой рецепт неприемлем, зная какие у вас цены заоблачные на продукты. А вот в России это вполне приемлемо. У нас молоко и масло не так дорого, и по качеству отличное (особенно кубанское).😅

Прочла все комментарии, думаю никакой замороженный кефир или сметана смешанная с кефиром не даст такого результата...Сегодняшний рецепт , это рецепт настоящего сыра..даже можно и без масла и без блендера,подержать под гнетом и будет тоже настоящий сыр.....А с маслом и блендером это уже оооочень вкусный сыр)....Азербайджан..
