  • Healthy Christmas truffles /Spiced Chickpea truffles
    150 g of pitted dates
    1 Tablespoon of Coconut oil
    3/4 cup Chickpea flour 80g
    1 teaspoon of gingerbread spice *
    Pinch of salt
    For coating :
    75g of dark chocolate
    1 tsp coconut oil
    20 g of white chocolate
    Sprinkles
    Soak the dates in hot water for about 5 minutes. Drain and Puree the dates in a food processor with the coconut oil and salt . Add the spice and chickpea flour, process till you get a smooth texture. If your mixture is too dry you can add one to two teaspoons of water .
    With the help of a 1 Tablespoon scooper , scoop the mixture and form balls ( it will give about 14 ) .
    Freeze them for about 15 minutes.
    Melt your dark chocolate and coconut oil on a Bain Marie or in the microwave.
    Dip the cold truffles in the melted chocolate using a fork or toothpick , coat them completely . Let them set . Melt your white chocolate , pour it into a small piping bag or ziplock. Make a very small incision. Now it’s time to decorate the truffles. Put the sprinkles on before the white chocolate sets.

    Keeps for a week in the fridge
    *if you don’t have gingerbread spice make your own : 1/4 teaspoons of each :ground ginger powder, cinnamon and all spice .
    1/8tsp ground clove
    1/8 tsp of ground nutmeg
