    About the hands in the pastry bag part, my former company did not provide proper food safety training, so I wasn't aware of many things, which I do apologize for. Plus, I constantly wash my hands during work so they are much cleaner than you think. Now that I had worked in the kitchen and am working for a bigger company I am more properly trained and certified. Please not assume all hospitality workers are provided proper training.
    This was filmed before the pandemic so please stop asking why I am not wearing a mask.

    As a barista, I see that you are invested and interested in improving your craft. You have tons of skills running such a fast paced bar by yourself with techniques as ghost steaming and still producing primo latte art and proper texture for each drink. It's quite impressive!! You have quite the future ahead for you.

      I never knew it was called ghost steaming, thanks for letting me know! I got the idea from a coffee shop I used to visit back in uni, and decided to use it since it helped me save 10 secs+ just to do the till, shot, and milk all at the same time.

      @@jessiegao_ out of curiosity, what’s the thinking behind the higher brewing ratio than the typical 1:2? Is it just how the specific roast is best enjoyed? Hope you don’t mind me asking!

      @@Shawdigital For this specific roast we were using, a higher brew ratio suits the general taste of the area we were serving, and it also tastes less intense (it was quite strong for a medium roast). The brew ratio is not a strict guideline, so yes for this roast I chose a higher brew ratio so it tastes better in general. Feel free to play with the ratio as everyone's preference is different.

    i've been working as a barista for a few months in a small town independent coffee shop, and i have mad respect for you - doing all of the jobs alone, single-handedly running the show, it's amazing! many people don't appreciate how stressful a job it can be, especially during a morning rush. thanks for uploading ❤️

    There are drawbacks with having to work on your own, but the positives are unique. There is a certain dignity to it, a self-reliance, mastery, a flow. Beautiful video, well crafted and a real insight into your working life at the time.

    If you’re an employee, it speaks volumes about your boss given the conditions in your job. What if you have to go to the bathroom? What if you want to have a decent, warm meal sitting at a table? Those things and not the latte art itself drew my attention the most. If you’re not the boss, he/she should be really ashamed to be making a literal fortune (independent coffee in London I’m sure it’s not cheap) out of somebody else’s health.

    The barista is, in my opinion, the most underrated skilled worker in hospitality. 99% of people have zero clue how difficult it is or what goes into it.

    I hope your boss pays you what you’re well worth for the diligence, dedication and discipline to your craft! IME, this always comes down to personality and work ethic. Some people have it, as you do; some people just don’t. The former will just about always land feet first in life. There is never an abundance of people with outstanding work ethic.

    Saying "Hello, how are you?" to customers, with eye contact, is one of the most important thing an employee can do, especially when the customer walks through the door. Making the customer feel noticed and welcomed will play a big part of them coming back to you again and again. Of course the quality and taste of the coffee plays a huge role as well haha

      @@yumiko4502 there will be an area out the back where stock is kept, there's usually a toilet there. If she has to go then she'll just lock up the shop for 2 mins - source? Worked in a little shop for a summer.

    RESPECT!!!! Next level commitment! 6:00 This is a good one. I go to my corner cafe and the coffee is amazing but the barista-cashier NEVER SMILES even when there is no one around. Nonetheless, I greet her and drop a good one in the tip jar. I still go to support.

      I never thought it was important until I realized that a small hi would change someone's day. My boss was also absolutely obsessed about good vibes, so we all got the habit to greet customers. Having good customer service doesn't cost you anything!

    It's a really hard job and you do it really really well.
    Watching what a barista does from first hours of the day to closing lets you understand how hard it is.
    And I feel pressure only practicing latte art at home alone, while you serve 4 drinks at the same time 😁

    Most cafes don’t know anything about the science of coffee brewing. It’s nice to see someone that dials in their grinder. You just need to break out the VST refractometer!

      Some places try, but you can only get so far paying people sh***y wages and pocketing the rest to send your children to elite private schools while the children of baristas get roughed up in some public inner city nightmare school.
      Unfortunate truth 80%-90% of the time.

Figuring things out together with your community, in order to see the next generation... is far more important imho....

    This summer I had a whole breakfast restaurant for me, here in Spain people don't mind such beautiful coffees but rather get kind of annoyed if you don't greet, smile and dedicate a few minutes to chit-chat with them lol. Wish I had the oportunity and time to master the amazing skills you show!

    Great work! I remembered when I have my own cafe and I work from 3pm to 1 am. Got home at 2 or 3 am every day.. Such a wonderful memory.

    I am 2 months in as a barista and I love it. It can get busy and hectic but staying calm is the way to be.
    Our bar is a bit bigger than this and we can have up to 4 workers behind the bar, 2 baristas and 2 cashiers/runner.
    No need to make it a bigger deal about it, staying calm is key and saying hello is always good. I’ve work with other who make it more dramatic than it’s needed but at the end if the day we are good. We do latte art with mugs but most of our orders are Togo cups so we don’t need to do latte art. It’s fun.

    This was so soothing to watch. I’m two months into my specialty coffee job and still trying to get my head around things! We have a similar machine - would you have any tips for that steaming wand? I find it a little awkward! Also, if you’re going to be working shifts alone so much, we have an Ubermilk for busier times - it might be handy for your rushes! 🥰✨

I used to live close to your coffee shop and would walk past it on my way to the tube in the mornings and on the days where I wasn't too busy (and you didn't have a line of customers) I'd come and grab a coffee! I've since left London (moved to Beijing), but miss this little coffee shop! I hope you're well!

    and still the most pleasure moment to work when you get the flow and you love your machine!--good coffee--good steps and habits-good art--slow and smooth--

      Being a barista is NOT a though job, a though job is to work in the construction in Alaska in winter or to pump petrol out of an Atlantic platform. What a waste of time 8h a day making coffee for random people 🤷🏻‍♂️ get a real job plsss

    I really like your video! I just noticed one thing .. that you're holding the cup from top/ touching the place where people put their lips to drink, which is not the best practice ... some customers tend to get angry, esp. in Europe

      I always ask the technician to come in ASAP, it got fixed not long after

      Changing the gasket is an easy task and every barista should be able to do it on his/her own. First and foremost: when the leaking appears it's an indication the maintenance interval is way too long. Is it really a GS3? I've seen quite a few of them, both off and on-line and they always were a single-group.

      😅 I'm sorry but many coffee shops in London provide zero training and my boss was particular about not letting us do any maintenance as it is costy if we mess up. I learn from the technician when he does maintenance, which are the things you think baristas should know. Having an assumption is the worst when you treat new baristas in the industry as no one is born the job and everyone has a different attitude about learning. I'm not sure if you work in coffee or not, but rather than assuming someone should know about a certain knowledge because you have a high standard and judging them , maybe you should teach and give advice instead? It's a Strada AV, my bad, but looks a lot like a GS3 :)

No offence intended as, well, my coffee standards are sky-high as I’ve been drinking espresso since 2004, writing about it for six years and making it for over two years by now. I forgot that owners (and it’s their primary responsibility) or Italian lesser brands --- and I have nothing against good Italian espresso, I love it! --- tend to not support their contracted coffee shops with proper training but that’s my fault or wrong assumption. I’ve been to London many times and while Marzoccos and NS/VAs are almost omnipresent these days it does not guarantee each and every barista is allowed to make technical adjustments or deep maintenance. Glad to have recognized Strada though. :-)

    I love your milk steaming technique. The angle of the wand on my Bianca wasn't quite enough to avoid holding the pitcher, so I 3D printed a tilted platform for my pitcher to sit on. Now I can steam without holding it.
