So sorry about that! I add it right after the bourbon, and you can adjust the amount here. I’d taste first, and if it needs a little kick, use the ACV as desired :)
Forgive my ignorance, as I've never tried bourbon before. If I were to used rum, or even spiced rum, would that be blasphemous? Or will some sugar chemistry be thrown off here. I feel like it would be interesting, kinda like how spiced chutneys are a thing. What are your thoughts?
I think a dark spiced rum, or barrel aged rum might work! Definitely worth a try :) I wouldn't recommend a white rum as I think the key here is those spicy oaky notes... and I hope you get the opportunity to try bourbon!! Sometimes I think bourbon and a really nice barrel aged rum can be interchangeable and a nice way to change things up! Enjoy!!
A couple of weeks, at least! That is, straight from cooking. If you’re canning, it can last much MUCH longer, but I’ve never been able to resist eating it pretty much right away 😂
You do need some fat to cook the onions and get that glossy finish but you can absolutely work with something a bit leaner! . In this case, I removed some of the grease before adding the onions. You want about 2 tablespoons of grease left in the pan after cooking the bacon.

Interesting. I am not a huge bacon person but this sounds interesting.
If you enjoy a sweet & salty flavor combo, you might like it! The bacon isn’t actually overpowering... let me know if you try it!
