Proper Pastry Cream in my Thermomix

  • Excuse the editing - but this is an extract from my choux video! This 90 second video shows you how to make proper professional pastry cream in the Thermomix using my recipe. Makes about 600g.
    Ingredients:
    250g milk
    200g double cream
    1 vanilla pod scraped out
    80g sugar whisked with 38g cornflour
    2 eggs
    Method in TM5 & TM6
    Set for 7 minutes, 90 degrees and speed 4
