    Brenda, beware, one year I planted a "boatload" of onions and I still have some in my freezer after two years. God bless y'all and keep growing.

      Two years ago we had tons of onions...we froze them, freeze dried them, made french onion soup..... If I wind up with way too many I can always sell some at the farm stand or give them away. I hate not having our own home-grown onions. Thanks for the encouragement.

      I just know that I don't want to be trying to roast 75 pounds of tomatoes in a day. That takes a lot of time.

    Wish I'd seen this video last weekend. I turned 55lbs of tomatoes into sauce this weekend. I still have about 60lbs to process so I think I'll roast them!!! Thanks!! You and your husband remind me of me and my guy...I am battling a cold so I left my kitchen a wreck last night...woke up to all the dishes done!!! He is right at my side when I need help with my canning. It feels so good to have all that all the shelves, but it is exhausting!!!

    Roasted are bar none the best. I tried a batch years ago, and now almost every tomato is roasted from that day on. I roast tomatoes, peppers, onion and garlic, pickling salt and sugar together, and then blend before canning. This past year, I threw one cayenne pepper in the large batch. I only do a batch of stewed tomatoes the old way. Roasted pasta sauce is amazing in lasagna or pizza's. Great video. Thanks from Ontario 🇨🇦

    I am new to gardening and canning. I had so many cherry tomatoes this year that were wasted because I didn’t realize you could freeze them. My question. all you need to do is wash them and put them in freeze bags? So happy I found this channel

      We're happy you found us...welcome to the farm. Yes, I just wash the tomatoes and throw them in a freezer bag. ( I core the larger ones and cut out any bad spots.)

      I was thrilled with how it turned out. I was hoping they would still get that roasted flavor even though they had been frozen.

    I always freeze paste tomatoes and then drain and process through my Vitamix. A thick wonderful sauce skins and seeds and all. Then I freeze in 2 cup containers.

      We did a taste test between a batch that I put through the strainer to take out seeds and skinds and a batch in the vitamix. That sauce with everything in there tasted so much better. Plus there is so many nutrients in the skins I like having that in the sauce.

      I actually used to throw out the extra liquid, but decided to boil it down separately last year and we could not believe how much flavor was in it. I'll never throw that out again.

    I also freeze tomatoes in order to have enough to can. I usually plant close to 20 plants but in order to have enough to do a large recipe I have to freeze! I also roast them with onions and garlic and keep the skins on. I think , like most things, the good vitamins are in the skins! The roasting adds such a deeper flavor and while it's more work it's well worth the effort. Thanks for sharing!

      It's so much easier to can the tomatoes when the crazy season of gardening is over. I can't believe I hadn't roasted them before...they are SO much better. I guess 'better late than never'. Thanks for the encouragement.

    Lots of hard work there, I'm trying something new by adding pickle crisp to my next lot of green beans and canned carrots. Not pickling them but just doing them in water. I saw another utuber doing it and it helped to stop them becoming mushy.

      Let me know how it goes. I stopped canning carrots because I didn't like them mushy. I would love to have canned carrots that aren't mushy. That would be WONDERFUL!

    I canned all my tomatoes for decades. Then I ran out of jars and dehydrated and powdered some. Now except for a few jars of 'drinking tomatoes' I make tomato powder. The space I save is awesome.

      We did make some powder last year and used it mostly to add to soups, stews and other dishes. I didn't do any this year, but probably will do that again next year.

      Yeah, but I'll be glad I did it every time we open a jar over the next year. I will definitely take a little break from canning, but still have a lot of my list that needs done for this coming year.

      I did them at 375 and just did them until they had a little bit of brown/char on them.

    What kind of portable burner are you using for the canners? That can support that heavy of a pot? Thank you.

    Another idea for the excess water/juice is to can it separately and use it when you make soups or beef stew or roast beef. Adds a delicious element. Never throw it out it’s full of nutrients! 🥰❤️🇨🇦🙏🏻🍁Another idea for roasting your tomatoes use a large electric roaster and you can continue to cook it down straight into the sauce and it eliminates a lot of the work and a lot of the pans and pots that you would have to wash. One other thing if you aren’t adding additional lemon juice to your sauce are you concerned that your tomato sauce doesn’t have a high enough acidity for water bath canning?? I know a lot of people pressure can tomato sauce because they question if the acidity is high enough. Anyway just wondered if you had considered that especially after you mentioned that it didn’t seem to have the same level of acidity taste. Oops you did mention pressure canning. Sorry I didn’t watch all the way through before commenting.

      I tried the roaster, but I guess I'm too impatient. That water juice is SO flavorful when it's boiled down. I'll definitely keep that idea in mind if I ever have some that I don't use in the sauce/soup. Thanks!

    Question.
    I didn’t know frozen tomatoes could be roasted so thank you for the video!
    My question however is about your window “shade” and your window “curtain” behind your sink faucet!
    It looks like our kitchens are set up identical but I don’t know the “words to use “ to search for the pull down push up shade, nor do I know what that kind if stapling curtain is called to order them. Can you help me to find some to put in my windows?

      I didn't know frozen tomatoes could be roasted until I tried it. Thankfully they can.
      The pull down shade is a Levelor blind. They were in some windows when we bought the house so I'm not sure where to tell you to look for them. Maybe Amazon??? Ifyou're asking about the curtains , it was just a piece of cloth that I hung up with some nails and string.

    The people who built your house probably built a summer kitchen right outside the back door. The Midwestern one I remember had a work counter running around all sides, a sink on one end and a stove in the middle of the room. All messy stuff from the garden was cleaned there before it went into the house, chickens processed, canning done -- all dirty, smelly, hot and humid kitchen work.

      A lot of the farms around here did have a summer kitchen. If this farmhouse had one it must have gotten torn down long ago. There's no evidence of it left. That would be a dream to have a separate kitchen for all of the really messy/hot/.... work.

      We had a summer kitchen out the back door which over the years had become a rather wornout garage with a dirt floor. We added a family room with an attached garage. The garage has cupboards on three sides and appliances intended for canning and freezing. It wasn't safe to have propane there so never used the stove for canning, however canned plenty in the house. Those burners for your canners look like the "ticket " and I liked your method for bone broth, too. Lots of work but yummm. I have used roasters in the garage. Helps with all the steam in the kitchen and, as you had, the smoke alarm going off.

    I had the same experience with roasted tomatoes. I let them cook for a while in the slow cooker after they came out of the oven, but of course that doesn't work for large quantities. Have you already checked whether there are adapter plates for your induction cooker? Here in Germany you can buy metal plates that you put on the induction stove so that you can use normal pots there. Maybe you also have these plates so you can use the All American Canner.       We looked briefly at the plates and still might give them a try. (I haven't sold my All-American yet) I worry a little bit about the weight on the stove. The All-American is so much heavier than the Presto even before putting any food/water in it. I need to check to see if there is any weight limit on my stove. I was happy with how well the Presto worked.

    on the roasting, did you do it at 350 and for how long or what? Just watch until they seem roasted on top?

      I did roast at 350 and just until they seemd roasted enough. I wanted a little bit of charring on some of the skins.

    Great job a humidifier will help with the humidity that you have l,m on the Oregon coast so I have a lot of humidity

    I do it with skins on and I even leave the seeds in. Once you puree it all, you can't tell.

    while cooking down the tomato water, does it scorch less easier than cooking with the tomatoes?

      It doesn't scorch at all. I put it on the highest setting and it just boils away. I would imagine that if it got really thick it might scorch, but I don't get it that thick. It's amazing the flavor that is in that boiled down water.

For two years, my garlic didn't produce a lot, even with rotating my garden beds. It is very frustrating having to buy items we work so hard to grow 😶.

    Nice set up 😅 a question I have with canning, with all the proces the tomatoes go through, are you at all worried about losing vitamines, or is that a myth?

      What I've read says that they do lose some vitamin C, but other things are not affected by the heat.

      It chops the seeds into such teeny, tiny pieces that you don't know they are there.

      @@kristychavez2149 It's a Vitamix Professional Series 750 Brushed Stainless Steel Blender With 64 Ounce Wet Container and 48 Ounce Wet Container. We've had it for 7-8 years so there are better/newer ones avaialable now.

    No, canned tomatoes are not roasted....but, you can buy canned roasted tomatoes, it will identify that on the can. I've been using a Campchef cooker outdoors to cook mine down, for the reasons you explain in your video....that works much better for me and it doesn't goop-up my kitchen, fire alarms etc.

      It's been so long since I bought commercial tomato sauce/pizza sauce that I can't remember what it even tastes like. Yes, canning outdoors would be a good idea. If I had the exhaust fan installed it would have helped. It should be installed shortly and I'll get my kitchen back in full working order.

      I had always used Ball, but late I've been using ForJars. I saw people in other canning groups talking about them and so far they work wonderfully!
