- A few weeks back I mentioned making a GIANT Belgian Bun...Well, today is that day...
9lb and over 11,000 calories of every self-respecting patisserie lover's favourite iced snack...But can it be eaten by one man?
RECIPE:
1600g plain flour
1 litre milk
150g butter
8 tablespoons of sugar
2 packets fast-acting yeast
3 eggs
350g lemon curd
300g currents/raisins/sultanas
400g icing sugar
METHOD:
Mix dry ingredients. Add wet ingredients. Mix. Turn out onto a floured surface. Knead for ten minutes. Cover in a bowl with clingfilm until mixture has doubled in size. Cut into strips. Spread lemon curd and raisins. Roll into one giant wheel. Bake on 160 fan for 90-120 minutes. Ice. Top with a cherry ;)

Q: How come you don’t get fat?
A: I eat like this for 1 hour of a 168 hour long week. In simple terms, I eat at caloric maintenance over the course of time, meaning I don’t gain weight.
Q: Don’t you worry about your health?
A: Not in particular. I’m active. I eat nutrient dense foods five days a week. And, I get quarterly bloods done, amongst other health checks.

Hey Beard! FYI next time let the bun proof once more for 30-45 minutes after rolling it and before the bake. Will be lighter and cook easier. Great job with the bake anyway! Very impressive!

na to be fair it was moist to eat, not over done kinda tough...it was just the sheer size of it in the end...i think microwaving it probably would've made things worse haha
As someone who's attempted baking now and then I have to admire your attempts at making these giant monstrosities with such success. I suggest applying for a spot on Celebrity Great British Bake Off next year 😋

I as Belgian can tell you I have never heard of a Belgian bun before 😂 We have like a raisin bun (rozijnenkoek) but it is with normal pudding and tor sure without the cherry🍒

You can always wrap the outside in foil half way through baking to keep it from getting way too dry. Will still cook all the way through and stay nice and moist.
At yeast you can be proud knowing you didn't knead any help rising to this challenge dough...

I've got chest pains just from watching that, especially after reading the recipe, that's the sort of quantities I'd be using to make 40-50 buns! Probably overbaked being that dry and I had to look away at the kneading, one thing though I definitly won't feel any guilt the next time I sneak a Belgian bun! Takes tear and share to a whole new dimension...........

The pastry closest to it is the "rozijnenkoek" or "couque suisse". But we don't have all that icing nor the cherry on top.

If you keep doing all this baking Beard, you are going to need to get a stand mixer =) Also yesterday I squeezed over a gallon of lemon juice from my meyer lemons that were still on the tree, and jarred four quarts of lemon curd and used the rest to make lemon bars!
