It is funny how differently I cook when Mike is away. I just ate a garden tomato sandwich for dinner tonight while making a batch of grape leaves for when Mike comes back on Friday. When I’m alone, proteins are optional and I only cook 1 or 2 small meals a day but it is 3 solid square meals when he is home. I’m going to make a big batch of ratatouille that I can eat over rice or with eggs for the next few days. Thanks for the inspiration. That frittata/crustless quiche looked fantastic.
Sounds great to me...especially that tomato sandwich! I have gotten David down to 2 cooked (or otherwise prepared) meals most days. For the third, he can make a sandwich, open a jar, have cheese and crackers, etc. It's not that I don't love cooking, but stopping my day to cook 3 times was leaving me little time for anything else. So when I batch cook for myself, like you're doing with the ratatouille, I feel like the productive part of my day doubles.
Nothing wrong with talking to the dog... I do it all the time. The dog, cat and the chickens are great company and they don't talk back and they are great listeners.

Its a daily occurrence around here for my husband and I to ask each other to repeat something we thought was directed to us, only for the other to say "oh, I was just talking to the dogs". Honestly, the dogs and rabbits are my therapy because they are all great listeners and never give me grief for anything I say. Hubby works from home, and I don't work, so needless to say the dogs are spoiled rotten, even if they do have to put up with all the conversation! 4. I loved seeing how you used leftovers to make new meals! I like to really mix things up and use things you wouldn't normally put together to discover new flavor combos. 5. I'm sad for you that you can't have real cheese because that soft taco was screaming to me that it wanted to be a quesadilla... that, or I'm craving quesadillas, which is pretty much constantly. I'd make them tonight if I wasn't already planning a dinner with my recently canned peach salsa! I'm still stoked that I got to the peaches before the bear/neighbors did!!! Not sure if I told you but a neighbor told us last week that his apple tree was loaded and the next day they were all gone 😲 I'm glad the bear likes apples more than peaches!!! Ha!

@@growandpreserve Apparently figs need heat, which we've truly only had in July because the nights were pretty cool in June. We had a *very* late last frost too (May 11th, at least in my city, as opposed to the April 11th predicted by the Farmer's Almanac) so that is probably playing a role. I'm hoping the week long freeze last Christmas didn't do lasting damage to the fig trees. I have a baby fig tree but its too young to fruit, so I can't use it as a judge. We thought we lost it that week but it has finally rebounded now that it is hot. I just think the whole fig season will be delayed. Goat cheese was a great way to test the waters! I'll keep my fingers crossed for you that you can tolerate it. I wonder if you would tolerate raw cheeses? Do you ever order from Azure Standard? They carry quite a few, for which I am thankful because I just can't find it locally. So the peach salsa was a hit with my hubby, but not so much with my son, which I kinda predicted. I used it on salmon and it was so yummy! I totally want to do your pineapple salsa soon! And on the apples, I have to admit its looking like it was a bear vs the neighbors. It'd be easy for them to help themselves to our peach tree, but much harder to gain access to the neighbor's apple tree. I'm still keeping my eyes on them though and the camera will remain pointed on the tree until the last fruit has been picked. Sadly, I'm now fighting with the yellow jackets to get any of the fruit left 😢 They make holes in the fruit even while its still on the tree!

I think its too late for this season, but I may give it a go next year. I'm just worried about having to reapply frequently cause you know what rain can be like here. That's why I've never had much success with DE in the past either. Seems like its good for a day, two at the most, and then we get rain. To be honest, this year the bugs have been bad because I've been bad at amending, fertilizing, and applying natural pesticides at the first sign of trouble. I am juggling too much to be doing any of it well. Maybe you can help with another problem... ever get those tiny whiteflies? I've seen a little of them every year we have gardened, but this year it is a plague of biblical proportions. They're everywhere! And I'm reading that they are tricky to get rid of... resistant to most pesticides, natural and chemical. I'm going to make petroleum jelly traps to reduce their #s and hope for the best!

Normally, I would use diluted Neem oil with a bit of Castile soap on the eggs, but if you're battling adults, maybe the yellow sticky traps I use for fungus gnats would help too: amzn.to/3Kclfvn. So far, here I've just been able to pick off the leaves with the eggs. Hope I didn't just jinx myself! Cabbage moths and aphids have been my primary problems here. If you find something that works on the white flies, please let us know!

Thanks for the tip on the German Johnson. I am very disappointed in my garden this year. I also do not think Craig's Grande are very impressive. The San Marzano are not near as nice as my paste variety last year. I was late getting seeds started and didn't use the same planning and prep method this year so I will take the blame. Just got behind with losing Dad and then Mom in 6 month time. So perhaps my heart just wasn't into it. Alas, I will do what I can with what I get and get a little on my shelves when possible! I'm with you on the figs, I used to have a beautiful giant mission fig, but we moved and I can't find them around here, errrg. I like to make spiced fig jam and strawberry fig jam, and hey i heard about a jam called frog jam that sounds delightful that I want to make! And my tortoise really loved figs as well, so that's a weird trying to explain to Mr T why there are no more figs, he is not amused. he makes do with strawberry's.
Thanks, Gwen! Hmm. I get the dry mealy texture when canning cooked chicken in liquid, but the raw pack seems good. Maybe it's simply accommodating the product in how you serve it. As I think about it, I always have some sort of sauce or creamy something with raw packed chicken. Avocado, mayo, broth, salsa, etc. Perhaps that's off-setting the dryness? How do you normally use your raw pack chicken?

I bought 5 lbs. pecans and 2 lbs. walnuts in my last Azure order. They are absolutely beautiful and delicious. I need to get something done with them so I can store them. Thanks, Vicki! I did soaked pecans and almonds back in this video: ua-cam.com/video/1Z9l71N8tiM/v-deo.html . So easy. I do them in half gallon mason jars. Fill about 4/5ths with nuts. Add 1-2T of good salt...don't skimp, unless you avoid salt. Just enough soaks into the nuts, so you don't need to add more later. Both pecans and walnuts soak for 6-7 hours. Almonds soak 7-12 hours. Drain, rinse lightly. Spread on either cookie sheets or dehydrator trays. I do mine in the oven overnight at 170F. Dehydrator at 165 is fine as well. Pecans take 12 hours. Walnuts may take a couple more hours. Almonds take 16-18 hours. Let cool. They keep in the pantry for weeks.

Most notably in 2020 when I couldn't find new lids for awhile. If you mean one piece lids, like something that might come on a pickle or spaghetti sauce jar, then no, I haven't done that. I've seen her do both, and she seems to have good luck with both. Unless I were in a real pinch, I probably wouldn't reuse a commercial one piece lid because I'm a bit OCD about uniformity in my canning pantry. 😏

They sell silicone sleeves that fit right on the handle of your pans when you use them in the oven…. They re great! No more burnt hands!

Have you ever canned in used button top jars like Rachel @ That 1870's Homestead did in one of her videos? It was interesting.
@@vickiiluvboxers4191 I'm not sure what you mean by used button top jars. If you're talking about reusing lids in good shape, yes, I have certainly done that. Most notably in 2020 when I couldn't find new lids for awhile. If you mean one piece lids, like something that might come on a pickle or spaghetti sauce jar, then no, I haven't done that. I've seen her do both, and she seems to have good luck with both. Unless I were in a real pinch, I probably wouldn't reuse a commercial one piece lid because I'm a bit OCD about uniformity in my canning pantry. 😏

Yes, the jars from store bought items. I watched her video and tried it, didn't work for me. I'm like you, I love for things to be pretty and in order. Rachel called them button top jars.
I have some really cute little jars that tuna comes in and wanted to try to reuse them.
