My go to staple! I always add fresh herbs at end of cooking and change those up depending on what taste I'm wanting. For Asian flavor I add fresh grated ginger, white pepper and a touch of toasted sesame oil, I might not use tomato in that mix; for Mexican flavor like a tortilla soup I use frontier brand taco seasoning, fresh cilantro, lemon or lime; for earthy or Italian, a bay leaf during simmer and flat leaf parsley at the end, maybe a touch of lemony olive oil on top of the greens. One of my faves is a "cabbage roll" soup, add lots of chopped cabbage, fennel seed, vegan Worcester sauce, bay leaf, lots of tomato and some paprika, brown rice, it's so delicious!!! I use a multi cooker and can sauté my items before switching to a simmer mode, love it's convenience and it doesn't make my kitchen hot on warmer days! 😍
At the point when you're sautéing the onions and garlic I would probably add some dried herbs or seasonings to give it more flavor. I love cumin or paprika, maybe thyme?

It does look like the Hammer Stahl slow cooker. It is beautiful but rather pricey. I looked on Amazon and found a few from West Bend that can also go on the stove. They are priced considerably lower but they are not as beautiful. Thanks
Instant pot has a slow cooker function and I make dry beans every day because it is also an amazing pressure cooker! Whole grains and organic beans in minutes. I batch cook and freeze them. No expensive cans!
Celeriac, which is celery root, chopped, is really good in a soup like this. If you want a nice red color, add a beet root to it during cooking, then add the beet tops, chopped, near the end of cooking. Also, for a more savory taste, add a wedge of chopped red cabbage, about halfway through the cooking. Don't overcook cabbage or it looses its flavor and changes the scent of the stew. I add a teaspoon or so of apple cider vinegar at the finish.
So thank God I made a huge batch because I just went through 2 huge bowls for dinner !! The broth is absolutely to die for. Just a question, do I have to wait for it to cool completely before putting it in a jar and in the fridge ? Thanks !!

Yes - I do add a number of different herbs and spices at around this point, depending on the flavor I want.
