So glad for the video today. Currently snowed in, in Southern Indiana. When I saw the leftover potatoes in the pan in the sink, I wanted to cry! Save them for your breakfast with eggs, so so good.
FYI- Tennis balls are bad for dogs teeth. The felt coating is like sand paper and can wear down the teeth. Get some Chuckit Balls or Racket Balls some squeaky spiky balls. You can punch out the squeaky thing if it gets annoying, but my dog loves to make the ball squeak.
Japanese A5 isn't the sort of steak you'd want to cook as an entire slab, anyway. The way you had it in Japan, where it's sliced extremely thinly, is how you want to eat it; the richness of the marbling can be overpowering otherwise. I've found that American Wagyu hybrids are at the perfect level for making steak. Great video as always, Ryan!
For steak you either want to cook it straight out of the fridge or wait at least 45 min to an hour to ensure even temperature. The range inbetween will give you a worse steak otherwise
I am not vegetarian but you can make a tofu scramble with peanut sauce and a side of black beans with chiloulah that is killer. Super ez. The Tofu gets super crispy on the outside with the sauce. Very good! Be sure to make the peanut sauce yourself. PB, soy sauce, garlic and fresh ginger, a little lime juice. No need to cover the steak as it steams it rather than searing. Probably why it overcooked. You can do a test by pressing into it with your finger as it’s cooking. After awhile you will get a sense of how done it is. Looks delicious though.
Hot Creek is an otherworldly spot for sure. You can hike down to the bottom usually but there are alot of warning signs that you will boil if you fall in. Cool spot. Ryan that looked like Fossil Falls with that giant what we call “Earth Pimple “ in the background. Steak & Taters is the perfect meal. Great video. The Eastern Sierras never disappoint.

Love how u cook 3 meals a day for yourself at beautiful locations...there's a thai/laos dish called "pad krapao" so simple and delicious best with just steam rice
Fun fact: That one bright star you see at sunset is frequently Venus! You can use a sky tracker app to confirm! Cooking that steak medium isn't too much of a crime with a steak that marbled. Dinner looks good!
FYI: Steak needs to sit at room temp for almost an hour before internal temp is the same. The 10 to 20 min rest is wrong! And as been proven so multiple times by testers.
“Proven wrong” by people that don’t understand the point of the rest. Why would you want the core of the steak to hit room temp? that’s not the part you’re gonna cook. You want the outside room temp so the cut doesn’t shrink from thermal shock, upsetting the contact point between pan & steak.

The places that you've gone to so far in your travels, do you think a 26 foot box truck would be able to handle the road conditions? I'm planning out my build but having a hard time pulling the plug on what platform I want to build on. Any feedback?
If you're trying to cook a steak based on time, you want about 2.5 minutes per side, especially with all the searing you did on the sides. Might even drop that down to 2. That's actually my baseline timing, with checking to be sure of actual temp.
Just a friendly cooking tip, should never cover the steak with a lid while it cooks you create steam and moisture which takes away the desired crust and will almost always over cook your steak. Depending on thickness, 2.5-3.5 minutes on each butter baste as ya did for a few minutes and then let sit uncovered for nearly as long as you cooked the steak for. Thanks for posting a great video!
FYI unless you made them yourself or if it specifically states otherwise, bacon bits are vegan! That's why most brands call them bac'n bits or something similar.
You may do better with canola or grapeseed oil when doing steak on the stovetop. Its more tolerant of high temps. I do all my beef on the stovetop now, bbq dries it out terribly.

Obviously entirely down to you and Alan but generally you wouldn't cook meat in the same pan as vegetarian food. Just saying.
