  • This dish epitomises the flavours of Hong Kong, in your kitchen at home. Join us as Jeremy teaches you how to make the perfect salt & pepper pork chops, perfect with a bowl of steamed rice on the side!
    Ingredients::
    2 pork chops on the bone (approx. 200-250g each)
    2 garlic cloves
    2 bird eye chillies
    2 spring onions
    ½ teaspoon sugar
    ¼ teaspoon salt
    ¼ teaspoon white pepper
    Pinch of five spice
    1 tablespoon Shaoxing rice wine
    1 tablespoon light soy sauce
    2 tablespoons corn flour

    Love your site . I am a retired Chef and I spent my last 18 years in a high end grocery store with a huge wok kitchen . I worked many shifts stir frying and really enjoyed it and still do . Now I just do it at home . In fact I am making these chops tonight .

    Jeremy it would be fun to watch you cook on a wok burner from time to time. I got interested in wok cooking watching your channel and then decided I was doing pretty well but tired of smoking up my apartment so I invested in an outdoor wok burner and realized it is a completely different pace of cooking. All of your techniques you teach I understood but now that I use an outdoor wok burn I realize how essential they are and that you need to become pretty good at them else you will burn your food. So it might be interesting to watch you cook something on a stove and the the same thing on a wok burner to demonstrate the necessary pace change.

    What is the difference Chinese food and Hong Kong?

      Hong Kong style usually means more Westernised, café-style fast food and baked breads. In Hong Kong, Chinese food is more traditional, sit down to have a meal style slow food.

    What kind of oil do you use???

      Use any neutral oil, most use canola.

      We use vegetable oil, but as someone else has said, any neutral oil will work! - Lee
