I have added sofrito when making pot roast and boy does it taste good! When I freeze my sofrito, I put mine in snack size bags in the freezer so I can add just a small amount to my food. It gives the food such a good taste. I don't think the jarred sofrito taste as good as fresh.
Have you made Green Seasoning as well. Check Caribbean Pot for the recipe, we in the Caribbean use all three..Sofrito, Green seasoning and also Eppis...I am from a small island and we use the Green seasoning and we use Culantro in place of Cilantro and Sweet and hot peppers , garlic, celery , Parsley , green onions and thyme. , some times we also add mint and yes Ginger. .. Ninette Bird - The Caribbean Wife-
Robert Bird it varies from Island to Island, traditionally in Barbados more onion, thyme and marjoram is used. In Montserrat they do something a little different too and we're as we put our seasoning inside of the meat, they put theirs on the outside. It's all good though.
Ginger and green onion are not traditional ingredients in Puerto Rican sofrito but I’m tempted to make a batch with those items just to see what it’ll taste like. Also, you need cilantro which you added AND culantro (which are coriander greens) also, not only bell peppers but Puerto Rican sweet peppers; know as “ajices” in Spanish are important. They look like scotch bonnets but are just sweet. Very delicious. Overall, I love your videos. You give great advice and you are an excellent cook.

I would blend it with olive oil instead of water and store it in the fridge. The oil will cause it not to rot. And just limit the amount of oil I use in my dishes.
Hello Gina, I'm not a big cilantro person so I substituted with flat-leaf Italian Parsley and I added lemon zests it is so good it bumps up any dish 10 fold

My Grandmothers made theirs fresh each time they needed some, onions, green onions, thyme, marjoram salt, b pepper, lime juice, hot pepper. They use a mortar and pestle or just a fork to crush it all together because they didn't have what we have now. Use to season fish, chicken or pork, nothing beats it. Now to those items I add ginger, garlic, celery the leafy part, parsley and sweet pepper. That's just me but traditionally in the Caribbean we use hot peppers instead of sweet peppers. It's all good.
Bonita Weekes seasoning comes from a mixture of spices and used to spice up foods. They are used in addition to the sofrito or Epis, which is a mixture of selected veggies blended that would lend a distinct flavor to the meats or food.

I also looked it up on Walmart website for the Sanzo..glad I watched this because it looks better than the store version. I plan to try the recipes that I have watched (4)so far. I know sofrito from Puetorican cooking it is the star of most of their recipes GOYA puts out the Red and Green sofrito which is needed in their legendary stewed red or pink beans. So I identify sofrito in Pueto Rico cooking my Island have a large Puetorican presence in the population and it's one of my favourite places on planet earth taking day trips to Pueto Rico and sampling their cuisine and of course Lechung that famous pork of course.
Hi Gina. Went to your Sofrito recipe. Authentic Sofrito does not include Ginger or the green onions. Also it includes Culantro and Cilantro. Also, we use cubanelle peppers along with green and red bell peppers. The onion can be white or yellow. You also left out the little sweet peppers. Not to be confused with the Jamaican peppers. Ours (Puerto Rican) are sweet. A note on the Ginger. It has a very distinctive flavor and will totally change what sofrito should taste like, and it’s very strong. I would suggest to store it seperately and add it only if you really want to have it in your dish. I certainly intend to try it.
You are not the AUTHORITY on what is and is not CONSIDERED AUTHENTIC SOFRITO....EVERY BROWN CULTURE has their own version...ON EVERY CARIBBEAN ISLAND, and ACROSS the AFRICAN CONTINENT, SOUTH and CENTRAL AMERICA.. ALL HAVE THEIR OWN VERSION and THEY ARE ALL AUTHENTIC. Stop being that TYPE...It ALL STARTED Centuries ago and they are ALL AUTHENTIC & SIMILAR....from the TAINO/AFRICANS/MAYANS/ASIANS... EVERY CULTURE HAS THEIR OWN VERSION.
Now I don't have to go out of my way looking for special peppers which sicks. What I love about your channel is your different and those are the best cooks, making it your own.
I am from Panama and I always add culantro (which has a stronger flavor), oregano, some Goya adobo and half package of Goya seasoning which give it a little red color. I keep them in a mason jar in the refrigerator or freeze them.
Hi Gina, I find when I blend the onions and peppers first I don’t need to add water or oil. Just my tip. I store mine in a small mason jar and freeze the rest. I’m a new subscriber. Love your tutorials and your laugh.
We just call this green seasoning in most of the Caribbean. We dont cook without it, different islands make slightly different. In Trinidad we add all you did but instead of bell peppers we use pimentos it's a seasoning pepper, hot peppers and a dash of vinegar to preserve it last for months.
In the Caribbean we make this seasoning. I only do it twice a year though for thanksgiving and Christmas to season my turkey and pot roast. I used to use water but I had noticed that it doesn’t last that long so I now use oil instead an I just reduce the oil in my cooking. I also add more stuff to mine such as sweet pepper, scotch bonnet pepper, cilantro and tarragon along with a couple dry herbs. I just call my seasoning but other islands have their own name for it. Nice job

So I identify sofrito in Pueto Rico cooking my Island have a large Puetorican presence in the population and it's one of my favourite places on planet earth taking day trips to Pueto Rico and sampling their cuisine and of course Lechung that famous pork of course.
I am going to make this as soon as I get back from vacation ! Perfect to add to so many of my dishes.
Hi Gina. Went to your Sofrito recipe. Authentic Sofrito does not include Ginger or the green onions. Also it includes Culantro and Cilantro. Also, we use cubanelle peppers along with green and red bell peppers. The onion can be white or yellow. You also left out the little sweet peppers. Not to be confused with the Jamaican peppers. Ours (Puerto Rican) are sweet. A note on the Ginger. It has a very distinctive flavor and will totally change what sofrito should taste like, and it’s very strong. I would suggest to store it seperately and add it only if you really want to have it in your dish. I certainly intend to try it.

ALL HAVE THEIR OWN VERSION and THEY ARE ALL AUTHENTIC. Stop being that TYPE...It ALL STARTED Centuries ago and they are ALL AUTHENTIC & SIMILAR....from the TAINO/AFRICANS/MAYANS/ASIANS... Sofrito or a similar "seasoning" is used among the Caribbean islands and the recipes can vary.
Yeah. Here in Trinidad we use mainly chaddon benni (bandanya or culantro) and garlic. It's a game changer.
I am from Panama and I always add culantro (which has a stronger flavor), oregano, some Goya adobo and half package of Goya seasoning which give it a little red color. I keep them in a mason jar in the refrigerator or freeze them.

Hi Gina, I find when I blend the onions and peppers first I don’t need to add water or oil. Just my tip. I store mine in a small mason jar and freeze the rest. I’m a new subscriber. Love your tutorials and your laugh.
We just call this green seasoning in most of the Caribbean. We dont cook without it, different islands make slightly different. In Trinidad we add all you did but instead of bell peppers we use pimentos it's a seasoning pepper, hot peppers and a dash of vinegar to preserve it last for months.

In the Caribbean we make this seasoning. I only do it twice a year though for thanksgiving and Christmas to season my turkey and pot roast. I used to use water but I had noticed that it doesn’t last that long so I now use oil instead an I just reduce the oil in my cooking. I also add more stuff to mine such as sweet pepper, scotch bonnet pepper, cilantro and tarragon along with a couple dry herbs. I just call my seasoning but other islands have their own name for it. Nice job

Sofrito use by Puerto Ricans, but we don't use ginger.
