Well, Glenn and Tracey in Brisbane here. I have previously made a Laksa and it was not all that great. The balance was off and it was just "too much". This recipe and the comments to help culminated in both of us thoroughly enjoying our meal. There is only one improvement I think I could make.... get Justine to come over and share it with us! You didnt say how much extra water. You stated a little extra. It looked almost as much as the stock. How much was it. Easy enough for you to say but you didn't. Not much help was it.

Recipe sounds interesting BUT using chicken out of plastic packaging is so bad for the environment! Also meat should come from species-appropriate care, has a better flavour anyway.

Its not authentic laksa but ok if you’re in a hurry. Look for other laksa that is more real. I tried it because I was in a hurry but wasn’t that good.

It's not a strict science. You want about a cup of water to balance out the saltiness of the stock. Always taste as you go.
