How I Cook Food In The Backcountry While Backpacking

    Here is a couple of meals that I like on the trail. I get 1 and 1/3 cup of water, 1/2 packet of McCormick country gravy, the packet of bullion that comes in Raman, mix it up well in the water while cooking, crumble the Raman in next add favorite vegetables (I like mixed vegies) then your favorite meat (spam, left over, summer sausage, bacon bits, beef jerky, etc...) Bring to a boil, then simmer until noodles are soft. It is better than a mountain house and far cheaper. I made me a cossy out of some bubble rap you can buy at lowes in their furnace department. Two purposes helps to cook and keep food warm and is a great ice box in your backpack. Put in frozen food like hot dogs or meat balls (premade) and will keep things good for about 2 1/2 days if wrapped in your bag or jacket in the pack. I also get a 1/2 cup water 1/'3 packet of Italian spices, 6 oz tomato sauce, cut up premaid meat balls or summer sausage, hot dog... and add some cut up mushrooms, and break Raman in quarters, don't use the bullion pack it will be too salty. Bring it all to a boil and when noodles soft spaghetti is ready. Last is biscuts and gravy. Use English muffin for biscut, If fresh muffins will last 2 weeks in bag without going bad, toast at the fire, I like my eggs poached. Once eggs are poached put on plate to drain, dump out egg water and with 1/2 cup of water and 1/4 packet of McCormick country gravy, mix well, half way to boil put in Mushrooms and Meet (can buy precooked bacon or bacon bits or summer sausge, beef Jerky, fried spam chunks...) After eggs drain put on muffins and when gravy comes to a boil take off heat and let stand 30 sec, should be good gravy and pour over biscuts. It is making my mouth water already. Last tip for plates get a gallon milk jug, cut out side leave a little of the curve on the plate for shallow bowl. weights nothing and great for plate or cutting board. I usually have two in my pack.

    Hi Dan, Keep up the enthusiasm. I have numerous light weight back country meals. One of my favorites is freeze dried refried beans, minute rice, freeze dried beef crumble, fritos, taco bell mild sauce and sometimes the individual packets of tillamook cheddar cheese would be a bonus all in a tortilla. AWESOME burritos. easy to make since all ingredients rehydrate in one bag at once. Backpacking is a religious experience. Enjoy!
    Just the beans and rice works as well.

    I make almost all of my own backpacking meals in my dehydrator. Spaghetti, chili, chicken w/ rice...you name it...
    Way less expensive that way and I can control the sodium and sugar content.
    That being said, I will splurge for a Mtn House dessert from time to time. Raspberry crumble, mmmmmm...

      @@derekbrigette whatever you like to eat. Just so long as it doesn't have much fat in it, (butter, soft cheeses, cream, etc.)
      For softer/runnier stuff, (spaghetti sauce, chili), use the solid plastic fruit roll-up tray liners.
      Cook pasta or rice and then dry it. It will rehydrate much faster!
      Lots of UA-cam videos w/ recipes and techniques out there.

      May I add a note? The 1st thing I ever dehydrated was spaghetti, when it's ready to eat, plate up a suitable portion, transfer to parchment paper on dehydrator tray and repeat. It rehydrated perfectly, so good and cheap!

    👊🏻 Liteskin is the outside fabric. It’s from the same company that makes xpac. Inside is lined with Hex70 ripstop nylon.
    Spam is awful! Never never never!

    I like to put a circle of reflectix in the bottom of my pot. It protects the pot from getting scratched from the gas canister and then I can use it for insulation between the snow and the canister when cooking. It’s nice to see the windmaster nests nicely in the pasta pot. I’ve got to get one of those pots. 👍 Thanks for the video Dan!

    Hello Dan, I'm sure that all of your viewers, including me, appreciate you risking your life to present another fine video. Have you ever tried any of the Uncle Ben's rice products? I like the Spanish rice mix w/peppers. I usually add a little beef jerky and green onions. It is quite tasty and it's an easy prepare. Take care out there and always have fun. 🤗

    My wife and I have been dehydrating camping meals for about 25 years. In 2014 we did the Bowron Lake Provincial Park Circuit, in B.C. Canada, 85 water miles, 10 days for 12 people, all food weighed under 100lbs. We had Corned Beef & Cabbage, Hopping John, Spaghetti in meat sauce with garlic bread and no bake cheese cake for dessert, trail pizza, homemade humus, breakfast porridge and everyone's favourite Turkey Tetrazini. We only had oatmeal 3 times. My wife cooks without recipies, too my chagrin. I keep telling her to write this stuff down.

    Im a Spam Man! Goes with me every trip. Mountain house or other pre -pack meals only way for me also. A little more $ but way easier. And they do taste good.

    I haven't been on a hike yet. But at military field training I take my stove. I like to grill spam, potatoes and cheese. I bring the little camping seasoning multi spice and put some garlic salt and cayenne pepper.

    I highly recommend a dehydrator. I make whole food, not processed meals for one third the price of Mountain House. There is enough salt to call them cured.

    I sometimes just throw a packet of tuna or some freeze dried chicken in a bag with some couscous and spices. Great video as always, Dan!

    Thanks for the tip about the freezer bags. That'll be a big help the next time I go hiking. The last time I went out, I was making an off brand Mountain House meal and just threw it into my pot of boiling water because I didn't want to use the whole bag... Let it boil for a little too long and just burnt the hell out of that meal. Now I have a great alternative for rationing meals. Thanks, Dan.

    I like taking instant mashed potatoes (Idahoan works well) and I ordered freeze-dried ingredients like chicken, turkey, beef, corn, etc from Honeyville, Then I add to the mashed potatoes and add a little extra water to rehydrate. It works amazingly. The only thing is you have to repackage with a vacuum sealer the ingredients that you don't use or they go stale.

    Hi Dan. We have a hormone called Cholecystokinin that tells our brain that we are not hungry. It happens when we deplete ourselves of sugars and are now using fat for fuel. I was prepped for the PCT this year except for budget. I learned how to dehydrate my own food so not to spend so much. I'm also a diabetic and can't eat too much carbs. There's a book that I highly recommend "Recipes for Adventure" by Chef Glenn Mcallister. It teaches how to dehydrate food and make your own meals. I've made a bunch. There are some stores that carry dehydrated items at low cost that you can mix and vacuum seal with other items making your own food. Heavy snow year. SoCal is loaded with snow in the mountains. I can only imagine the Sierra's. Stay safe and hike on.

      Pretty sure CCK doesn't inhibit hunger, I think it a stimulating hormone when fat is consumed and it stimulates the release of bile and pancreatic enzymes. I think you are talking about ketosis which is another mechanism.

      @@colin7813 CCK does inhibit hunger apart from squeezing the gall bladder. Ketosis is a state of metabolism. Check out Dr. Annette Bosworth, Dr. Jason Fung.

    I like to eat well on the trail, and mountain House does have some excellent meals. I especially like their Biscuits and Gravy. But I came across Packit Gourmet, a small-batch freeze dried meal supplier, and they have some awesome meals that just add hot water to make, and they include condiments and pouches of tortilla chips and cheese when appropriate. Their Tortilla Soup, State Fair Chili, Pablano Corn Chowder, West Memphis Grits with Sausage, All American Works Burger, all just need hot water, and will make your taste buds happy.
    I absolutely love their food, and they are nice folks too that often send a personal note on your shipping copy in the box, especially after giving them a review or a comment on Facebook.

    There are ready to eat shelf stable Indian food meals that are heat and serve in foil pouches, add to that pre-cooked rice and you have a meal! Super cheap and yummy. If you need extra protein, add foil packaged cooked chicken. Can be eaten cold if you run out of fuel.

    I dehydrate chicken or hamburger before hand. Bring dehydrated veggies and Idaho mashed potatoes. Takes the same amount of time to rehydrate as mountain House but tastes way better. It's like a easy Shepard's pie or stew. Add some olive oil to add some fat to the meat because you have to boil out the fat to dehydrate it.

    Reflectix cozy for your Mountain House / Ziploc meal bag. It will keep the food warmer as it re hydrates. Put a gusset in the bottom of the bag & it will stand up too.

      The gusset is a great 💡idea 💡! How did you make yours? I am guessing that you may have thought to add an additional two strips of Relectix at the bottom of the bag and then securing with tape? Am I even close? Thank You so much for sharing your thoughts!

    I agree, Mountain House is the way to go. My two sons and I are heading to the Boundary Waters for a week at the end of May and may experiment a little more with the meals. Hopefully, some fresh fish a few nights for dinner. I like the idea of splitting the Mountain House meals into another bag. I recall making myself eat more than I wanted on a few occasions.

    I mostly eat mountain house meals or other brands as well for my dinners. At the end of the day it's nice to just boil water and eat the meal right out of the bag.

    On my last outing, I had Idahoan mashed potatoes with crushed up Fritos. I had kayaked 4 hours and hiked 2 hours. It was a quick meal that hit the spot.

    I have looked all over for those Ziplock Bags. I have found "Freezer bags" by Ziplock but they don't seem as thick as the ones you are using and they certainly do not look the same. Where did you get those?

    Nice video! I cook the same way except I split two MH meals into three Ziplocks to get 1-1/2 servings. Also I put the Ziplocks in a Reflectix cozy to rehydrate.

    Plastic straws make a great alternative for a mouth fellows. They cost nothing weigh nothing you can put them anywhere in your pack and carry an extra one or two of them and they work great.

    Thanks for the video! Glad you didn't die :) On snow it is best not to put the canister directly on the ground, using a rock, log or some kind of buffer will help the fuel heat up quicker. Also, an odd trick if the canister freezes is to pour water on the outside of it and then it will work....weird but effective!

    You need to either put the bag inside your jacket or in a cozy. You can make a cozy cheap with the mylar backed bubble wrap stuff and some duct tape
    Otherwise the food gets cold. I’m certain someone mentioned this in another comment, yes?

    Minute rice in a freezer bag, add boiling water, a chicken packet, and teriyaki sauce. Let sit for 5 minutes. Bring frozen broccoli if you want to get fancy and healthy. But yeah, Mountain House are so easy and tasty.

      I'm all for flavor and I eat a ton of fat and sugar on the trail but man, the extra salty stuff makes me so thirsty.

      There was one thing I saw and someone put calories as a con to mountain house meals. I was like its 400-600 calories for most bags thats needed especially if you stay active.

      @@tdg223 the amount of electrolytes you lose through perspiration and breathing is immense. Not replenishing them when you hydrate means you need to when you eat, or you'll get sick.
      Middle of summer at work, it's nothing for me to consume 2-3 grams of salt in 3-5 liters of water. If I didn't have that salt, I'd be completely drained. It keeps me alive and working.
      There does need to be a balance between sodium, potassium, calcium, and magnesium, but what your body needs is higher than what you might think.

    I had a Backpacker's Pantry fettuccine alfredo with chicken... After a 12 mile hike up a big mountain it was amazing. 2 servings was really 2 servings. I almost exploded trying to eat it all.

    You should try the Backpacker's Pantry meals. They're at REI and a tad more expensive than the Mountain House but wow are they worth it. Then you can pick and choose from both companies and increase your food selection!

      fry the mushrooms in a couple tablespoons of water before adding chopped bacon. they won't absorb as much grease. peace

    ....spam mmmm .. canister stoves are the best...just tried out bsr stove...I like it... Man I went backpacking this weekend and snow followed me! This dang weather this year! Ever tried backpacker gourmet? I hear it's great.. according to David gray videos haha

    LOL! I agree... everything (including LARA Bars) eats better on trail. Oh, you have all the cook kit items that I would upgrade to! Envy!
    My favorite is my own salmon salad recipe... using the EVOO Pink Salmon pouch plus i chop some... green apple, celery, green onions, raddish, carrot... then I top with avocado and course sea salt... yummy! Not sure if it would be recommended on a long hike but it sure is good!
    My kids favorite is hiker pizza... mini pepperoni and string mozzarella with sauce on tortilla. They stuff it big like a burrito. I am not sure how to do sauce on an overnight hike yet but will be interested to know what other hikers use for sauce on trail.

    If you’d like an insulfleece-lined cozy for freezer bag cooking, let me know. I make them and would be glad to send you one to try out. It stands on its own and weighs about 1.15 oz. It’s really handy to have a cozy if you ever start dehydrating your own meals to cook on the trail. They usually take longer to cook than a Mountain House meal.

      Funny that you mentioned dehydrating food for camping and hiking. Because I just bought a dehydrator a couple of weeks ago. That and a food vacuum sealing machine so I can start to prepare my own meals.
      You also mentioned something about some kind of insulfleece lined cozy. I'm not really sure how to use one with either a freezed dried or dehydrated meal.
      Is it something that you put the heated up meal into to keep it warm. While it is still rehydrating, and then can you eat out of it with the heating bag still in it?
      I ask because I would be interested in one for my camping and hiking trips. Because right now all I have to keep my meals warm is.
      One of those reflective bubble wrap things that I made out of that type of material. With some aluminum tape to hold it together and after using it a few times.
      It is already starting to fall apart and I have to keep repairing it.

    Winter hiking means you can carry fresh perishable food like eggs, bacon, steak 🥩, garnish hen. At least two days of a good fresh meals.

    Dan You gotta check out PackitGourmet Dehydrated meals. They are a local (to me, in Austin Texas) small family business and they make some excellent Dehydrated meals. They are comparable in price with Mountain House, with smaller servings. But the flavor and quality is wayyyy better. I am not a paid advertiser, just love supporting local businesses and IMO great products.

    I can go without spam. I'm allergic to pork products and they don't put the turkey spam into single containers. But loved the video and comments even through its 5 yrs old.

    I always see people talk about spam or tuna fish. Not the biggest fan of spam. I will eat tuna and some of the flavored ones are good, but my go to protein are the chicken sides.
    Buffalo chicken and loaded Idahoan instant mashed potatoes.
    Ginger chicken with Siracha ramen.
    Mountain house breakfast skillet for breakfast can’t be beat!
    Starbucks via or mochas for the coffee.

      Check out hummingbird hammock s and their straps....the hammock and whoopie sling straps are less than a pound together and barley take up any room...eno makes ULstraps too....and alot of times it is easier to find too trees then enough even/flat ground to set up a tent and a chair

    I guess I could save a couple ounces by switching to a BRS stove, but I love my Soto Windmaster. Spam burrito with Cholula hot sauce! Always carry extra mashed potatoes. If you add too much water to your dinner and it's soupy, just add some mashed potatoes to thicken it up.

      Great tip about the mashed potatoes! Also, I’ll never go back to a BRS stove again! The Soto is so much better! It’s only 1.5 ounces heavier as well!

    I go backpacking all the time WITHOUT spam. Haha! For a one night trip this coming weekend, I am taking chicken with rosé sauce. I picked up plain diced freeze-dried chicken and ordered powdered heavy cream online. Everything else is from my pantry and prepared in dehydrater. I eat a lot of prepackaged meals too. Depends on how much effort I feel like putting in.

    I've been using the Mountain House meals, but they are sooo expensive! I'd rather buy some store brand boil in a bag rice, a pouch of lemon flavored chicken and dehydrated soup vegetables.

    I love my human gear duo! I bought it after seeing yours! BUT! I don’t know how you can just have half a meal! I easily down a full one after a long day of hiking. You’ve got more self control then me, especially when lasagnas involved!
    Ps. I’m working on a recipe for backcountry butter chicken! But shhh 🤫 it’s a secret.

    Excellent video! Working my way through more of them, love it! I have the same stove. Best I've ever had. FYI, as you probably know, the stove is designed so valve is off well before you completely tighten the handle, like maybe 2 turns. 👍

    Just curious, why does nobody use MRIs for backpacking meals? I mean they’re cheaper than Mountain house meals by about half and you can field strip them.
